Strawberry Mojito with Giant Strawberry Ice Sphere



Are you enjoying the strawberry season like I do?  I certainly hope so.  Today, I want to share this super fun cocktail with you that combined 2 of my favorite things, strawberries and Mojito!

In a traditional Mojito, this cocktail consists of white rum, sugar, lime juice, soda water, and mint.  It’s a super refreshing cocktail that has a combination of sweetness, refreshing citrus and mint that complement the potent of the rum.  The soda water adds a little evanescent that takes this refreshing cocktail to another level.

In my version of Mojito, not only that I muddle in some fresh strawberries along with the mint leaves, there’s also a strawberry simple syrup along with a giant strawberry ice sphere that makes this drink looks super cool, in my opinion!  Pun intended!

Don’t you love the vibrant color of this drink?  I absolutely love how gorgeous it looks and it tastes just as amazing!  It’s slightly sweet and the tartness from the fresh lime juice and strawberries balanced well with each other.

Strawberry Mojito
Makes: 2

Ingredients for the Strawberry Ice Spheres:

1/2 cup strawberries, chopped
1 cups water

Ingredients for the Strawberry Simple Syrup*: 
1/4 cup strawberries, chopped
1/2 cup water
1/2 cup sugar

Ingredients for the Mojito:
4 Strawberries, chopped
1/2 cup of fresh mint leaves, rinsed
Juice of one lime
3.5 ounces white rum
1/4 cup strawberries simple syrup*
1/2 ounce Chambord (Raspberry Liqueur)
1 cup crushed ice
Club soda or sparkling water to top off the glasses

To Prepare the Strawberry Ice Spheres:
Blend ingredients in the blender until smooth. Pour into these sphere shape ice mold. Freeze overnight until frozen solid.

To Prepare the Strawberry Simple Syrup:
In a small saucepan, slightly muddle the strawberries, add water and sugar. Then heat the mixture until the sugar is completely melted and the strawberries have incorporated into the syrup. Remove from heat and let cool completely before use. If you are making the syrup the day before, chill in refrigerator until ready to use.

To Prepare the Mojito:In a cocktail shaker, muddle the strawberries with the mint leaves and strawberry. Add in the rum, strawberry simple syrup, lime juice, Chambord, and a cup of ice. Shake well for 20 to 30 seconds.

Add a strawberry ice sphere into 2 old fashion glasses. Strain the strawberry mojito into the glasses evenly. Top with around 2 ounces of club soda/sparkling water. Then give it a stir and garnish with a sprig of mint and strawberry. Enjoy!
