How To Peel Hazelnuts—With Video Tutorial
Have you ever came across something that is too good to not share with your friends? Well, this post and the 'How-to' video are definitely one of those moments for me. I love hazelnuts, but not so much in peeling them…until I discovered this simple method to peel them nicely and cleanly in just a few minutes.
The old method that I used was to first toast the nuts, then rub them between a kitchen towel to remove the skins. Not only it takes forever to remove the skins, they often ended up only partially peeled. Plus, I get hazelnuts skin all over my kitchen towel, counter top, kitchen floor, and myself. Yikes….not a pretty picture, my Friends. That really drove me NUTS! You might ask why bother peeling them, right? Actually, I don’t mind the added color of the skins at all. However, the skins often turn a little too bitter for my taste buds after they are toasted. So, I really prefer them peeled.

By the way, I pat dried the peeled hazelnuts with a paper towel and lay them on a sheet pan. Then toasted them for 15 minutes at 350 degree F. They turned out crunchy, toasty and fragrant. I ended up keep popping them as snacks.
How To Peel Hazelnuts (Printable Recipe)
2 cups boiling water
3 tablespoons baking soda
1 cup hazelnuts
In a medium saucepan with high sides, bring 2 cups of water to a boil. Add 3 tablespoons of baking soda to the water. The water will foam up.
Add the nuts to the boiling water and let them cook for 3 minutes. The water will turn black and that's normal. While the hazelnuts are boiling, prepare a bowl of ice cold water. After three minutes, remove a couple of nuts with a slotted spoon and place them into the prepared bowl of ice water. Rub the skin of the nuts with fingers.
If the skin doesn't come off easily, boil the nuts for another 1 minute and try the routine with another nut. Once the skin rubs right off easily from the nut, add the rest of the nuts to the ice water and peel away!
Place peeled nuts onto a paper towel and pat dry them thoroughly. Toast the peeled and dried hazelnuts at 350 degrees F for about 15 minutes.

DeleteI saw this in Foodgawker and I'm so happy I did. I've been using a lot of hazelnuts lately and find that roasting them and doing the kitchen towel thing is a pain, takes forever and doesn't work very well. Thanks a bunch for making the video! I'll try this next time I make hazelnut butter. :)

Hi there, 1 cup of hazelnuts measures at around 5 ounces by weight. So, if you need 24oz of nuts, it's approximately 5 times from my original recipe. So, use 10 cups of water, 15 tablespoons (equals 3/4 cup plus 3 tablespoons) of baking soda with 24 oz of hazelnuts. Please remember to use a large stock pot to prevent boil over as you know it's going to foam up. You might also need to cook the nuts a little longer than 3 minutes with this amount. So, do a couple of test nuts to make sure. Hope it helps.

DeleteBlanching is a neat way to peel hazelnuts. It's the same method I use to peel almonds, except that I don't use baking soda. Cool!
ReplyDeleteI didn't know that hazelnuts are hard to peel that you still have to boil them. But I appreciated your video, well done! Now, I'm thinking of what recipes to do to show my kids how to peel them also.-Ally
