First Day of Summer with Summer Berries, Arugula and Avocado Salad Recipe


Home Made Granola Parfait

Today marks the first day of summer.  How do you plan to kick off your summer?  I think it’s nice to jump start the day with a scrumptious Home Made Hazelnut Granola Yogurt Parfait for breakfast, that’s also good enough to be a dessert!

Berries and Avocado Salad

A nice and refreshing Berries, Arugula and Avocado Salad to keep you energized. 

Black Currant Fizz

Wash it all down with a glass of Black Currant, Meyer Lemon and Mint Fizz.

Summer Berries, Arugula and Avocado Salad:

Serves: 2

1 Lemon, zest and juiced
1 teaspoon Dijon mustard
1 teaspoon honey
1 teaspoon fresh thyme leaves
2 tablespoon extra virgin olive oil
kosher salt and pepper
3 cups baby Arugula
1/2 cup Strawberries, dices
1/2 cup Raspberries
1 California Avocado, sliced
1/4 cup cheese of your choice (I used baby mozzarella)

In a small bowl, whisk together lemon zest, lemon juice, mustard, honey and thyme leaves.  While whisking, slowly add the olive oil and whisk until vinaigrette is well incorporated.  Add salt and pepper to taste and set aside.

On two large serving plate, divided the baby arugula evenly, top with raspberries, strawberries, avocado slices and cheese.  Drizzle enough vinaigrette just to moisten the salad.  Serve extra vinaigrette on the side. Enjoy!

    1. Good question, Jen. hehehe...I have't post this hazelnut granola recipe on my blog yet. That's because it really similar to this Coconut Granola recipe here (http://utry.it/2012/01/citrus-yogurt-parfait-with-berries-and.html) Simply add 1 cup of roughly chopped hazelnut and 1 cup of sliced almonds instead of 2 cups of almonds from the original recipe. The rest are the same. Hope you like it.

  5. Oooh, the granola yogurt parfait looks so good. Love to have the recipe. I have ton of extra thick oatmeal that I would like to use up.Lovely shot so those nostalgic photos. Very nice!

    1. Thank you, Holly. The truth is, I have't post this hazelnut granola recipe on my blog yet.     Here it's raining and dark... fells like middle of autumn :-(. I hope it brightens up, otherwise I'll have to make a hot wintery soup instead of fizz and salad :-)

  10. I used to have instragram account but forgot what my account was! It's fun to follow but I just don't have time to enjoy and I can't keep up with all the social media. You take great pictures and love the photos. Your daughter is helping? How nice... I can't do anything when kids are around! LOL. Enjoy your summer Amy!

    1. aww....too bad you don't use Instagram any more. For me, I only take pictures as I go and upload them whenever I have a chance. I'm not really as active as many people out there. My daughter loves helping in the kitchen, especially measuring and adding ingredients for me into the mixer. :) Whenever I take pictures for the blog post, she would check out what I got. Sometimes, she would use her own kid's camera and take pictures next to me. :) It's fun to have her "help"...when she's not messing with my setting too much. LOL Wish you and your family a wonderful summer too.
