Spicy Chicken Wrap—Lunch for One (with Pictorial)
Since my Baby Girl started school this summer, I’ve got a few hours of “me” time during the day while both of my kids are at school. Yay…I finally got out of the night owl baking and posting habit, or maybe not. I still love the quiet time I have at night, it’s just different. That's my "Happy Hour", if you know what I mean.
What do I do with the “me” time during the day? Well, there’s something I’ve been planning and working on, but not quite ready for the revelation just yet. I’ll make an official announcement in the future. So, besides missing my kids tremendously, I've been spending more time cooking, baking, taking pictures (food, people, and scenic views, etc), and exercise. Yup, surprised by the last one? Me too!
Also, I get to enjoy preparing some simple lunch and dishes that I don’t usually get to make when my kids are around... such as this Spicy Chicken Wrap. So, don’t be surprised if you see more spicy recipes on my blog in the future. I love spicy food. Let me show you how to make it.
1) In a small bowl, mix the Japanese Mayo and Sriracha hot sauce together
2) Spread the spicy mayo on a tortilla wrap, leaving an 1/2-inch border
3) Place baby arugula in the center
4) Top with roasted chicken and tomato
5) Top with some radish for some crunch
6) Roll it all up and enjoy
It couldn’t be any easier than this, right? If you plan to serve this to your family, feel free to double or quadruple the recipe to make enough to share. If you have young kids or anyone in the family who don’t eat spicy food, substitute the hot sauce with ketchup. But I really love the spiciness in this wrap, especially pairing with the peppery arugula and radish. The chicken I used here was a left over roasted chicken drumstick from the night before. Simply warm it up in the microwave and remove the skin and bone before wrapping .

Spicy Chicken Wrap—Lunch for One: (Printable Recipe)
1 tablespoon of Japanese Mayo
1 teaspoon of Sriracha hot sauce
1 flour tortilla wrap (you can use any kind you like)
1/2 cup baby arugula
1 roasted chicken drumstick (bone and skin removed)
a few heirloom grape tomato, cut into quarters
1 small radish, sliced
In a small bowl, mix the Japanese Mayo and Sriracha hot sauce together. Spread the spicy mayo on a tortilla wrap, leaving an 1/2-inch border. Place baby arugula in the center, top with roasted chicken and tomato. Then, top with the radish, roll it up tightly, cut in half and enjoy.
This chicken wrap looks yummie...like the spicy touch...perfect for the warm weather.

DeleteOh, I loves this because it is easy for me especially to make this for lunch. I like to make lunch easy! And it is health with lots of vegetables too. Oh yes, I love to see more Lunch for One or Two...please post more and so I can know what easy lunch I can make :-)

ReplyDeleteHow is Japanese Mayo different in taste than regular mayo?

DeleteThe Japanese Mayo often use rice wine vinegar or apple cider vinegar instead of white vinegar or lemon juice as in regular mayo, so it's slightly sweeter. It also has a higher egg yolk content compare to regular ones. It just has that umami flavor that the regular mayo can't replaced. Texture wise, it's lighter and not as thick. This is the brand that I love to use.

ReplyDeleteGood you plan to start your baby with just 2 mornings a week. Mine goes 5 days and spend lunch and nap time at school too. I'm still adjusting the "empty nest" feelings. I know it's not quite that extreme...but kind of like that to me since it's the first time my baby girl is not with me 24x7.

DeleteYeah, I know exactly how you felt. I used to feel the same way too when my kids are younger. It's like finally I can actually take a deep breath & enjoy a cup of coffee by my own. haha.... I can hardly remember how can I go through all those sleepless night when they were babies. haha... Now, you see how time flies. huh!

DeleteHeehe so happy you use Japanese mayo~~~. I only use Japanese mayo (although I tried American one once). I'm thinking of making wraps for my children's lunch one time. I've never done it but I think it's pretty easy and delicious in lunch box. Sriracha sauce is a good addition!
