Back to School Recipe Idea: How to Make Cutie Mouse Bento Lunch Box 可愛鼠鼠便當飯盒



For those who have young kids, how was your transition for going back to school?  I hope all of you had a positive and smooth process so far.  Mysteriously, for my family, we’re returned to our normal school day schedules and routines rather smoothly.  Well, except that I had already forgotten to set my alarm clock twice in a week.  Luckily, I managed to wake up even before my usual time and that's just so... not me!

Part of my morning routine is packing lunches and snacks for my kids.  This school year, one of my goal is to pack more fun lunch boxes for my Kiddos!

As parents, we don't likes to open "un-touched" (or barely eaten/consumed) lunch boxes after school?  That’s probably one of the biggest fear for the lunch-packers (is there an official term for this role?)  For the kids, it’s always more fun to open a lunch box and see surprises inside.  After all, I think a fun lunch box will definitely help with one’s appetite!  Today, let me present to you the Cutie Mouse in the Garden 可愛鼠鼠便當飯盒 lunch box. It’s a Bento lunch box, with an open sandwich, veggies, hard boil egg, ham, and cheese.  It is also accompanied by a cutie little mouse wondering in the garden looking for her cheese.

Cutie Mouse in the Garden 可愛鼠鼠便當飯盒
(Kid’s Bento Lunch Box with Hard Boil Egg, Ham, and Cheese Open Sandwich)

Serving: 1

1 Large Organic Brown Egg
1 slice of bread
1 Slice of Cheddar Cheese
2 small slices of ham
a few cherry tomatoes
a few lettuce leaves
1/2 small carrot
2 black sesame seeds

Bring a pot of water to a boil, gently add the egg into the water and lower to medium heat. Simmer the egg for 9 minutes for a slightly soft yolk or 11 minutes for hard boil egg.

Then, transfer the egg to a bowl of iced water to stop the cooking process. Peel the egg shell and set aside.

To create the hard boil egg “mouse”:

Cut off a small piece of the egg white of the cooked egg to create a flat bottom. With a small paring knife, cut 2 slits on the top of the egg towards the pointy side of the egg. Cut 2 small rounds of carrot slices and insert into the slits about 1/3 of the way as the ears.

Cut a few thin strips of carrot for the whiskers. Gently poke a few slits around the whisker area and insert the carrot strips. Cut a longer carrot strip for the mouse’s tail.

Place 2 black sesame around the eye areas for the eyes. Cut the cheese into a triangle. With a straw, poke holes on the cheese randomly to mimic a block of cheese. Take one of the cut out cheese and place on the front area of the hard boil egg as the mouse’s nose.

Fold the ham slice in half and cut slits about 1/2 an inch along the folded edge, about 1/4-inch apart. Gently roll the uncut side of the ham to create a flower. You can insert a few carrot strips to mimic the stigma/anther. Repeat with the remaining slice of ham.

To assemble the bento box:
Place a few lettuces on the bottom of the bento/lunch box on one side, top with the ham flowers and cherry tomatoes. Place a slice of bread on the other side of the lunch box and top with the cheese.

Place the hard boil egg mouse on the other side of the bread.
Sent off the lunch box with hugs and kisses! I’m sure your little one will enjoy his/her lunch a lot!
