Unicorn Frappuccino – With All-Natural Coloring



Last week, Starbucks introduced a special drink that was only available for a limited time.  Yes, it was offer to the general public for less than a week only!   Many of my friends and family rushed to their nearest Starbucks locations and lined up for this specialty drink: The infamous Unicorn Frappuccino! Were you one of them who tried?

Unfortunately, the review and feedback of this drink was not as positive as the enthusiasm of the Starbucks fans!  It was quite a mixed review, I must say.  Some described it as a refreshing sour mango-flavored drink.  Some said it was a waste of money and tasted too artificial, etc.  I guess, the artificial came from the coloring of the drink?

Hence today, I’m sharing my sort of copycat version of the Starbucks’ Unicorn Frappuccino with you!  Why “sort of”? Because my version would probably taste nothing closed to the original version of this drink.  But the look and color is definitely a replica!  Only, I’m using all-natural coloring in my recipe!

My homemade version of the Unicorn Frappuccino is a Blue Vanilla Frappuccino, layered with Purple Blackberry Frappuccino, topped with cotton candy and edible gold stars!  It’s whimsical, magical, refreshing and oh so delicious!  The sweetness from the Vanilla Frappuccino balanced really well with the tangy Blackberry Frappuccino layer!  Of course, you can top these with whipped cream instead of cotton candy.  But I think the cotton candy adds a layer of dreaminess to this special drink!  If you’re hosting a Unicorn themed party, this drink will definitely be the star of the show!

Unicorn Frappuccino

Ingredients for the natural blue coloring:
1/4 of a small organic red cabbage, chopped
1/8 to 1/4 teaspoon baking soda
water

Ingredients for the Blue Vanilla Frappuccino Layer:2 to 3 scoops of vanilla ice cream (Here’s my homemade recipe: https://goo.gl/KytjvT)
1 tablespoon agave (or honey)
1/2 teaspoon vanilla extract
1/2 cup crushed ice
1 tablespoon of natural blue coloring

Ingredients for the Purple Blackberry Frappuccino Layer:
1 cup frozen blackberries, thawed
2 to 3 scoops of vanilla ice cream
1 tablespoon fresh lime juice
1/2 cup crushed ice

Ingredients for the garnish:
Rainbow color cotton candy
Edible gold stars sprinkles

To prepare the Natural blue coloring:
Bring a small pot of water to a boil, add the red cabbage into the pot. Simmer on low heat until water evaporated to about 1/4 cup. Strain out and discard the cabbage and let the coloring cool down. Add baking soda a little at a time until it reaches to the blue tone desired.

To prepare the Blue Vanilla Frappuccino:
Mix all ingredients in the blender until smooth. Store in the freezer until ready to use.

To Prepare the Purple Blackberry Frappuccino:
Place blackberries in the food processor or blender and process until smooth. Pass the blackberries puree through a sift and discard the seeds.
In the blender, add the vanilla ice cream, lime juice, 1/2 cup blackberry puree and crushed ice, process until smooth.

To assemble:
Pour the Blue Vanilla Frappuccino into serving glasses until 1/4 way full, alternate with the Purple Blackberry Frappuccino until 1/2 way up the glasses. Repeat the layers until almost to the top of the glasses. Garnish with cotton candy on top and sprinkle with edible gold stars.
