How to Make S’more Ice Cream Pie



Yesterday marked the first day of Fall!  The weather has been comfortable and mostly cooled down.  But it’s still nice and warm in the afternoon so my Kids are stilling craving for cool desserts most of the time.  The solution?  This scrumptious S’more Ice Cream Pie!

S’more is one of my Kids’ favorite treats.  I don’t make them too often, so it remains as a special and occasional treat for them.  But before I am ready for the cozy campfire and traditional S’more, this S’more Ice Cream Pie is the best transitional treat in between the Summer and Fall.  It combines the best of both world with the comforting gooey and charred marshmallow on top as well as refreshing ice cream filling.  Plus, who doesn’t like magic chocolate shells and chocolate graham cracker crust?  Yes, these are all the components of this pie.  The perfectly sinful and delicious combination, all in one easy-to-prepare pie!  If you haven’t watch the video tutorial above, please check it out.  You’ll agree that this pie is super easy to put together.

This recipe calls for a total of 3 cups of softened vanilla ice cream.  You can use homemade ones or store bought ones.  However, when I was making this pie, I realized that I didn’t have enough vanilla ice cream while preparing for the 2nd layer!!!  As much as I prefer my homemade ice-cream recipe over store bought ones, I also didn’t want to drive to the store for just 1/2 a cup of ice cream!  So, I improvised and substituted with coffee ice cream instead.  It turned out quite delicious with a more complex of flavor.  Next time, I’m going to try with a layer of chocolate ice cream as well!  So, by all means, explore and experiment with different flavors of ice cream when you make this pie!  Just like everything else in life, we need to learn to be flexible.  My new motto of the week, “Keep Calm and Eat Pie!”

S’mores Ice Cream Pie:

Ingredients for the Chocolate Graham Crust:
1/2 stick (4 tablespoons) unsalted butter
1/2 cup semisweet chocolate chips
20 square graham cracker, yields about 2 cups of crumbs (divided)*

Ingredients for the Homemade Magic Chocolate sauce:
2 tablespoons butter
1 cup semisweet chocolate chips

Ingredients for the Ice Cream Pie:
3 cups vanilla ice cream, softened
1/4 cup finely ground graham cracker crumbs* (reserved from crust)
6 tablespoons semisweet mini chocolate chips
20 to 24 mini marshmallows
To prepare the chocolate graham cracker crust:
In a microwave safe bowl, melt the chocolate chips and butter in the microwave in 30 second intervals. Stop and stir in between. Set aside to let it cool down slightly.

In the food processor, process graham cracker until they turn into fine crumbs. Reserve 1/4 cup of crumbs for filling the pie. Add ½ of the chocolate mixture that we prepared, into the food processor with the remaining graham cracker crumbs and pause a few times. Then, add the remaining ½ of the chocolate mixtures and process until well incorporated.

Press the chocolate crumb mixture into the bottom and sides of a 9-inch glass or ceramic pie dish. Transfer to the freezer for 15 minutes to firm up.

To prepare the homemade magic chocolate sauce:
In a microwave safe bowl, melt the butter and chocolate chips in the microwave in 30 seconds intervals. Stop and stir until chocolate is completely melted. Set aside to cool down slightly.

To assemble:

Take the pie crust out from the freezer and drizzle ½ of the magic chocolate sauce onto the crust. Spread even with a rubber spatula if desire. Place ½ of the softened ice cream on top and spread into an even layer. Sprinkle the 1/4 cup of reserved graham cracker crumbs on top, follow by the mini chocolate chips. Then, place the pie back to the freezer for 30 minutes to firm up.

When the ice cream firmed up again, drizzle the remaining half of the ice cream on top, followed by the remaining half of the magic chocolate sauce. Arrange the mini marshmallows on top and freeze for at least 2 hours or overnight.

To serve, take the pie out of the freezer for at least 5 to 10 minutes. Slightly toast the marshmallows on top with a kitchen torch. Enjoy!
