Pink Grapefruit Frosé 玫瑰香檳柚子冰冰



How’s your summer so far?  Are you enjoying the summer heat or are you hating it?  For my family, we’ve been visiting the pool, water park, and going to cool places (a.k.a. air-conditioned places) to stay cool.  Please share with me your favorites things to do to stay cool if you have any suggestion!

However, I still turn on my oven from time to time to bake this once or twice a week.  That’s a necessity!  But other than that, I’m trying to keep the house cool and make as many No-Bake treats as possible.  This Pink Grapefruit Frosé 玫瑰香檳柚子冰冰 is one of my favorite summer treat!  It’s super easy to put together and very refreshing.  You might wonder what is a Frosé?  Well, it’s pretty much Frozen RoséYes, a word that I just made up!?  But hey, this frozen treat is so good that I think Frosé should be included in the dictionary!

This slightly sweet and tangy frozen treat will cool you off instantly!  The pink grapefruit juice is super fresh and it compliments the floral Rosé Champagne perfectly.  You can even substitute the Rosé Champagne with sparking white grape juice (skip the simple syrup because the grape juice is sweet enough) to make a kids’ friendly version.  But for the grown up, this is a perfect treat after any summer meal!

If you’re hosting summer parties, this will be the perfect dessert to make because you can, and should, make it ahead of time; leaving you more time to plan for the rest of your menu.  You can even explore and try other citrus juice with this dessert.  But I personally love the flavor and color of the pink grapefruit, so pretty and elegant!

My Little Girl and I love tea parties.  We often host our own “party” at home for afternoon tea.  From savory sandwiches, petit fours, French Macaron, hot chocolate, to classic English tea, you name it and we’ve tried them all!  One of our favorites got to be these Tea Flavor Cookies!  Not only they are quite easy to prepare, they are also very delicious!  The bonus is that they are super adorable, don’t you agree?

Today, I’m going to show you how to make them, not just 1, but all 4 flavors.  I’ll show you how to turn 1 basic cookie dough into 4 different flavors: the Original flavor, Matcha Japanese Green  Tea, Earl Grey, and Rose.  If you have some other tea that you enjoy more other than those that I listed,  by all means, substitute with the tea or tea bags of your choice.

If you haven’t check out my video tutorial yet, go ahead and watch it.  I’ll show you step-by-step on how to turn your cookies into these cute little tea bags shapes.  Best of all, there’s no special cookie cutters required!   But of course, you can use your favorite cookie cutters to stamp out the dough as well.

These Tea Flavor Cookies are crispy, buttery, and elevated with a hint of tea flavor.  I kept the tea flavor to the mild side because that’s how My Girl likes them.  If you prefer a stronger tea flavor, check out my recipe notes below and I’ll show you how to do that as well.

Out of the 4 flavors, I have to say, my favorite one is the Rose Tea flavor cookie!  The floral tone is simply beautiful and elegant in these tea cookies!  You’ve got to give these a try to see for yourself.  So, what is your favorite tea to enjoy?  Have you tried other treats that are also in tea flavors?  I can’t wait to hear from you!  Stay tuned for another yummy recipe next week!

Dark Chocolate Covered Hazelnut with Fleur de Sel

If you’re a dark chocolate lover, you’re in for a treat today.  Okay, basically, you can make these with milk chocolate, or white chocolate, if you like those over dark chocolate.  But I highly recommend that you give the dark chocolate version a try first.  A while ago, I shared a post and a video on how to peel hazelnut easily.  You can read more about that post by clicking here.  Or, simply click here to watch the video.  They will make your life much easier and happier if you’re as crazy about hazelnuts as I am.

Dark Chocolate Covered Hazelnut with Fleur de Sel

These Dark Chocolate covered Hazelnuts with Fleur de Sel are simply amazing and super addictive.  Now you’re officially warned.  I keep these little gems in an air tight container in the fridge until I’m ready to pop them, one after another like no one’s business, or when I am watching Sophia the First with my Kids.  Okay, if you’re not sure who Sophia is, it’s perfectly fine.  I just needed something to cheer me up when I watch that same episode of Sophia by the 8945th times since the premier of the show this year.  I use 70% cocoa dark chocolate for dipping.  Please refer to this post, here, for tips and pictorial on how to temper chocolate.  As you can see, I topped these nuts with Fleur de Sel, one of my favorite ingredient to use in desserts to balanced out the sweetness.  


Fleur de Sel

Fleur de Sel ("Flower of salt" in French) is a hand-harvested sea salt collected by workers who scrape only the top layer of salt before it sinks to the bottom of large salt pans.  They are a little pricey compared to your daily kosher salt or table salt, but it worth every penny.  Plus, you only use a tiny little bit in a batch.  It adds a subtle crunch on top of the chocolate and the mild and smooth salty flavor is amazing with the smooth and slightly bitter dark chocolate.  Now, you see why they’re so addictive, right?

Besides popping them as is, I’ll share a recipe on my next post using these delectable little gems.  But for now, let me show you how to make them so you can start enjoying them as snacks before the next post is ready.

Dark Chocolate Covered Hazelnut with Fleur de Sel

1) Line a baking sheet with Silpat or parchment paper.

2) Then, have one of these chocolate dipping tool ready if you got one.  Click here for more details.  If you don’t have one, have a spoon and a fork ready.

3) Melt your chocolate, and let it cool slightly.  Add the toasted and cooled hazelnuts into the melted chocolate.

4) Give them a quick stir with a spoon to coat them evenly.  Then, use the dipping tool to fish the chocolate covered hazelnuts out.

5) Or use a fork and spoon to fish them out.  It works just as fine.

6) Place the chocolate covered hazelnuts on the prepare baking sheet with a little space between each one.  Sprinkle a little Fleur de Sel on each of them before the chocolate sets.  You can put the baking sheet in the refrigerator to speed up the process.  Usually 15 minutes will do.  Once the chocolate is harden, you can transfer them to an air tight container and keep in the fridge until ready to serve.

The toasted hazelnuts are super crunchy and the well tempered chocolate adds another little crunch, then, melt in your mouth in no time.  The sweet, salty, and nutty combination will lead you craving for more.  I hope you enjoy today’s recipe, tips and pictorial.  Stay tuned for the next post to see how I use these little gems besides enjoying them as snacks.

Meyer Lemon Sugar Scrub—Homemade Gift for Mother’s Day

Before I post another recipe for Mother’s Day, I want to share a quick Homemade gift idea that you’ll love.  Meyer Lemon Sugar Scrub!  Who wouldn’t want to be pampered and have smooth and silky skin?  Plus, smelling amazing after a massage?  Yup, you can achieve all of the above with this budget friendly homemade gift.  Winking smile  This super simple Meyer Lemon Sugar Scrub is the answer!

Honestly, I love receiving homemade gift because it just shows how much someone cares to take the time and love to make me something from scratch.  This Meyer Lemon Sugar Scrub certainly is luscious, yet super simple to put together.  I made this sugar scrub for a few friends, who just became new Moms not long ago and they adore this scrub.  With this sugar scrub, they don't have to head to a salon, but still can feel beautiful and pamper themselves at home.

The ingredients in the scrub are super simple as well.  They are Meyer Lemon zest, sugar, organic virgin coconut oil, and organic extra virgin olive oil.  That’s all!  It smelled wonderful and amazing as I was putting it together.  Please try to refrain yourself from eating a spoonful of it during the process!  I know, it’s very tempting.  Yes, it’s completely edible, but I don’t recommend it.  Unless….unless….never mind.  Smile with tongue out

To use, simply take a spoonful (or more) of the scrub, gently massage it on your hands, your feet, elbows, or wherever your skin feels rough and needs some love.  Simply rinse it off with lukewarm water afterwards.  You’ll have the most amazing, soft, and silky skin after the massage.  Please consider doubling or even tripling the recipe if you’re making more than one jar.  It’ll be nice to make some extra for yourself to enjoy as well.  Remember, presentation counts.  So, try to decorate it a bit by adding a nice label and line a tissue paper/cloth with elegant prints on the lid.  I love storing the scrub in the mason jars.  They are so convenience.  Smile
