How To Make Low Carb Dark Chocolate Mug Cake (Keto Friendly, Sugar Free, Flour Free, Gluten Free)

Have you jumped onto the low carb bandwagon yet? If not, you might really want to considered that.  Ever since I cut down on sugar and refine carbs, I feel more energetic than before!  I used to feel super tired and sleepy after lunch; Now, not anymore!  Well, it doesn't mean that I wouldn't want an afternoon "pick-me-up".  It's just that I don't NEED it.  I would enjoy one just because I can.  And this Low Carb Dark Chocolate Mug Cake is definitely a perfect afternoon pick-me-up!

This  Low Carb Dark Chocolate Mug Cake is super delicious.  The cake itself is soft, tender, and fluffy.  Best of all, it's sugar free, flour free, gluten free, and you just simply feel guilt-free after eating one!  In this video, I topped the cake with a little sugar free chocolate shaves.  But it's just as awesome if you add berries on top!  And if you haven't watch the video tutorial yet, you need to head right to my YouTube channel and watch it!  It's super easy to prepare and only need a few simple ingredients (I'll list them at the end of this post).  In fact, my kids know how to make these on their own!  That's how easy these Mug Cakes are.

Low Carb Dark Chocolate Mug Cake:

Ingredients for the Mug Cakes:

1 tablespoon melted salted butter
2 tablespoon Monkfruit Sugar Substitute
1/4 cup almond flour
3 tablespoons unsweetened cocoa powder
1/2 teaspoon vanilla extract
1 tablespoon freshly brewed coffee
1 large egg
1/2 teaspoon baking powder

Ingredients for the Whipping Cream:

1 cup heavy cream
2 tablespoons monkfruit powdered sugar substitute
1/2 teaspoon vanilla bean paste (or vanilla extract)
Sugar Free Chocolate Shaves, for garnish

To Prepare the Cakes:
In a medium mixing bowl, whisk all ingredients together until well incorporated.  You don't have to worry about over mixing because there's no flour in the batter.  Divide the cake batter into 2 (4 ounces) microwave safe mugs.  Microwave on high for 90 seconds.  Let the cakes cool down slight.  Meanwhile, prepare the whipped cream.

To Prepare the Whipped Cream:
In the bowl of a stand mixer fitted with the whisk attachment, add the heavy cream, powdered sugar substitute, and vanilla bean paste.  Whisk until stiff peaks form.  Transfer the whipped cream to a piping bag fitted with a star tip.  Pipe the whipped cream onto the cooled cakes.  Sprinkle with chocolate shaves and enjoy!
