Are you having a great summer so far?  The Kids and I are definitely having lots of fun!  From play dates at the park, visiting the library, summer swimming camps, picking herbs and summer veggies in the  garden, and last but not least, cooking and prepping food in the kitchen together!  All are simple activities and we’re taking them all in and enjoying a relax time without the hectic schedules and pressure of homework, just yet!   One of the recipes we made often is this Watermelon and Lime Popsicle.  We love our watermelon in the summer and this is a great way to enjoy a healthy frozen treat.

Pretty much, this is a recipe inspired and created by my Little boy. He definitely loves the Zoku pop maker and we utilized it to the max!  One day, he simply asked if we can try blending the watermelons and make them as popsicle!?  Oh yes, of course Baby!   It was one of the best Pops in a while.  Besides just watermelon, I added some fresh lime juice to brightens up the flavor and they turned out to be amazing!

There are only a few ingredients in this pop, and let me reassure you, simplicity is the best!  I added a thin slice of fresh lime before pouring in the watermelon puree to the pop maker for a little decoration and extra texture and tartness, but that’s totally optional.  I hope you like today’s recipe.   Wish you all a wonderful rest of the summer!  Stay Cool!

Watermelon and Lime Pops:
Makes 3 to 4 pops, depending on the size of your mold
3 cups watermelon, cubes
juice of 2 lime
1 tablespoon sugar
a few thinly sliced fresh lime (optional)

In the blender, puree the watermelon, lime juice and sugar together until smooth. Place a slice of lime in the popsicle maker (if using).  Pour mixture into the zoku pop maker and follow manufacturer’s instruction. 

If using traditional popsicle molds, pour mixture into the molds and chill until frozen, about 3 to 4 hours, depending on popsicle size. I use the Zoku pop maker and it only takes 7 minutes to make 3 pops. Stay cool and enjoy!

  1. I also enjoy school holidays with kids staying at home relaxing and not doing much, enjoying walk at the beach, playing with the dogs or just stay out of the routine. These popsicle just nice to chill out on hot summer day!

  2. Yay, so glad you are enjoying the summer with your kids, Amy :) We have been trying to soak up as much of summer as we can too since it seems to be going by so fast. These watermelon popsicles are the perfect treat to cool down with, I love the pretty color :)

  4. Amy these are lovely and I bet your kids absolutely loved them! I had seen those zoku pop makers at the international store. I need a replacement as my youngest has broken the handle off the one we have now.

    What a great idea! Never thought of making watermelon popsicles as we usually just eat the fresh watermelon as is. For the thinly sliced fresh lime , do you peel the lime before slicing or include the lime outer skin as well?

    2. Oh..and I let the skin on with the lime. I love the zesty flavors. You can leave it out if you don't like it, or even skip the lime slices all together.
