Fresh Mango Crêpe 芒果法式薄餅



Not long ago, I shared a recipe and video tutorial with you for Mango Crêpe Cake.  If you haven’t check that out yet, simply click here.  That is one stunning cake to be shared on special occasions.  But for a more day to day dessert or treat, this Fresh Mango Crêpe 芒果法式薄餅 would be the perfect choice.  Not only it has all the flavor from the Mango Crêpe Cake, but it’s much easier and less time consuming to prepare.

There’s a cafe on the Westside that sells crêpes that my kids and I loved so much!  Whenever we visited the area, we always enjoy our afternoon tea there.  But they are not cheap at all, charging at $8+ for a crêpe?  That could easily be the price of a meal!  So, for economic reason, I make them at home now. Best of all, I know what I’m putting into them and they are always wholesome!  Watch the video tutorial and you’ll agree with me on how easy it is to prepare these crêpes.

Coconut Mango Mochi Roll (椰汁香芒糯米卷)





When I saw my favorite Ataulfo mangoes in the market the other day, I was so excited!  I almost purchased all that they had put on the shelves, seriously!  I simply can’t resist these sweet, fragrant, and juicy mangoes.  If you haven’t check out my previous recipe and video on how to make Mango Panna Cotta yet, you’re missing out.  Simply click here to get that recipe as well!

Onto these Coconut Mango Mochi Roll (椰汁香芒糯米卷), they are absolutely one of my favorite mango treats.  The mochi part of this dessert is not overly sweet,  therefore, I recommend that you use the ripest mangoes that you have on hand.  The filling is refreshing, juicy, and fragrant, thanks to the gorgeous mangoes.  The coconut mochi layer on the outside gives this dessert a slightly sweet and chewy texture because of the glutinous rice flour.  With a hint of coconut flavor on the outside, it compliment the mango fillings perfectly.  This is also a naturally gluten-free treat because of the types of flours that I used.  See the list of ingredients at the bottom of this post for your reference.

Finally, the temperature is cooling down in Southern California.  Phew….I thought the summer would never end!  It’s time to bring out the light sweaters and Autumn ingredients.  Some of my all time favorite Fall ingredients are on this plate, Gold Acorn Squash, Arugula and Pomegranate!  Nice and simple.  This dish is not just only a gorgeous to look at, but also delightful to the palates.

I love to keep the flavors nice and clean in this recipe so that you can taste each ingredient.  When the fruit and vegetable you use are in season, they taste the best!  In my opinion, the best way to prepare them is to keep it simple.  Therefore, I roasted these gold acorn squashes with just a little brown sugar, salt, pepper and oil to bring out it’s natural sweetness and slightly nutty flavor.  After roasting, it is tender, creamy and oh so satisfying!  The soft and tender squash is resting in a bed of crisp and peppery arugula, sprinkle with the crunchy, sweet and tart pomegranate seeds on top. Each bite is heavenly.

Here’s how I prepare this dish, follow me to the kitchen!

1) & 2)  Preheat oven to 400F degree. Wash and pad dry the gold acorn. Cut them into 1/2-inch thick slices and remove seeds.

3) Place on two large sheet pan and drizzle with grapeseed oil.

4) In a small bowl, mix the brown sugar, salt and pepper together. Sprinkle over the acorn squash slices. Gently toss with your hands to evenly distribute the seasonings.

5) Roast the acorn squash for 10 minutes, then flip the squash and rotate the baking pans. Bake for another 10 minutes, or until squash is golden brown on the edges and tendered. Remove from heat and let cool slightly.

6) In a large bowl, toss all the salad ingredients together. Taste and adjust flavor to your own preference.  To assemble:  On a large serving platter, place the arugula salad on the bottom and top with roasted gold acorn squash. Enjoy!
