Wish Upon A Star - Rilakkuma Bear Bento



If my memory serves me right, playing with food was one of the big “no no” when I was young!  Maybe because of culture?  Or maybe different generations?  I don’t know.  Probably because my parents don’t want us to ended up wasting food.  How about you?  Were you allowed to play with food when you were young?  Well, I’m just glad that I can play with my food everyday in the kitchen now!  Oh, and of course, my kids are encouraged to do so as well!  After all, I think that’s a great learning and bonding time for us as a family.  Plus, the kiddos are definitely enjoying the food more if they prepare it themselves.  If you haven’t watch the video above, go ahead and check it out.  My kids and I had a good laugh after they urged me to add on the sound effects!

We enjoyed this Rilakkuma Bear dinner so much!  And the great news is that you can easily pack it into a bento box for lunch as well.  The Rilakkuma Bear was made with rice and a little soy sauce (for the brown color).  You can use brown rice instead and omit the soy sauce if you prefer.  You’ve got to watch the video to find out how to make the eggy blanky though.  It’s easier to make than you think.  Isn’t it super adorable with the flower and heart shape patterns?  I served the rice on a bed of lettuce, some grape tomatoes, and a Sweet and Savory Chicken Drumstick on the side.  Chick here for the Chicken Drumstick recipe.  These chicken drumsticks are one of my family’s favorites and I make them quite often.

Asian Summer Noodle With Dijon Sesame Dressing (夏の中華冷麵配芝麻芥末醬汁)

It’s the middle of Summer and the temperature sure is keeping us hot!  Are you also getting high 90s degree (F) in your area like we do?  I often found myself craving for something cold for lunch and dinner.  Yet, I want something substantial that would keep me full and packed with energies.  So when I need to chase the kids at the park or play that extra 10 minutes of soccer, I don’t feel weak and hungry.  Or maybe it’s just me getting old, I feel that I’m out of breath after just 15 minutes of run.  Okay, walk is more like it, who am I kidding!?  Anyhow, I make pasta salad quite often in the summer.  But I found myself always go back to this Asian Summer Noodle With Dijon Sesame Dressing (夏の中華冷麵配芝麻芥末醬汁).  This truly is my family’s favorite lunch and dinner when the weather is too hot to have a bowl of steamed rice or hot noodle soup.

You might remember the Chicken Cold Noodle from my Little Girl’s birthday party (see picture below).  It’s basically the same idea of a cold noodle but with slightly different ingredients.  The version I made for the party has the same dressing and noodles, but I used slightly different toppings.  For the party, I used rotisserie chickens, Baby cucumbers, carrots and green onions.

The recipe that I’m sharing today (see picture below) includes ham, red/orange bell pepper, carrots, baby cucumbers, and green onions.  I garnish it with a couple of bird’s eye chilies that I crafted into flowers blossoms.  This chili is extremely hot so if you don’t like spicy food, you can omit that.  But you can always use a milder chili and make the same garnish if you’re serving it at parties and gatherings.  I omitted the bell peppers in the noodles I made for the party because some guests are allergic to them.  But the bell peppers really adds a nice crunch and sweetness to this dish.  So, if you are okay with the bell peppers, use them!

Want to see how I prepare this refreshing and scrumptious Asian Summer Noodle?  Follow me to the kitchen.

For this Asian Summer Noodle recipe, the main ingredient of course is the noodle.  I used this fresh spaghetti noodle (see picture below) that I bought from the Chinese supermarket.  I know, I think my local Chinese market is getting very diversified!  I totally love that!  You can also use any fresh egg noodles you have on hand.  I love this particular one because the texture is wonderful.  It remains “bouncy” and el dente even after chilling in the fridge overnight without turning starchy.  Maybe I’m picky?  But I really dislike starchy noodles.  If you’ve ever tasted some chilled white rice straight from the fridge, you know what I’m taking about.  Yeah, I don’t recall how I got that experience to begin with, but I did.  So, using fresh noodles is very important for this recipe.  It’ll make a difference.  This is a two pound bag noodle and my recipe only calls for one pound.  You can keep the unused portion in a freezer bag and only defrost it in the fridge overnight before use.  They will be as nice as fresh.

Now, onto the garnish, the curled green onions and chili blossoms.  This is a trick that I learned as kid, watching my parents cook.  I was so fascinated by how the ingredients transformed themselves with just a simple trick. 

1) First cut the green onions into 2 inches sections.  Then, thinly slice them vertically.
2) Split the chili vertically and carefully into 5 or 6 sections, depending on the size.  The bigger the chili, the more number of incision you can make.
3) Soak the cut up chili in a small bowl of iced water and watch the “blossom” opens up one by one right before your eyes.  Speaking of eyes, no matter what happens, don’t rub your eyes after you’ve handled the chili.  Especially if you have forgotten to use a pair of glove, like me!  Oh my!
4) Soak the green onions in a separate bowl of iced water.  They will curl up in no time.  By he way, the darker part of the green onion will curl up better than the white part, and they are milder in taste compare to the white and light green parts.  So, use the whole green onion and don’t waste any piece! 

Pretty easy, isn’t it?  Now, you can make your own edible garnish at home easily.   Not only they are pretty to look at, they add lots of flavors to the dish as well.

Let’s move on to the dressing.  This dressing couldn’t be more easy to prepare, yet packed with wonderful and complex flavors.  Here’s how I made it.

I) First, place the toasted sesame seeds in a small food processor.
II) Process the sesame seeds alone until it’s powdery.
III) Add the rest of the ingredients (see recipe below) into the food processor.
IV) Blend until everything is smooth.  And that’s it.  Keep the dressing in the fridge until ready to serve.

Since my kids love this noodle, I keep the dressing on the milder side and only used 1 teaspoon of Dijon mustard.  But if you love a little more kick, by all means add another teaspoon of Dijon mustard or whatever amount you preferred.  Just taste the dressing along the way and adjust it to your own liking.  Add a little at a time because you can always add more, but you can’t remove an ingredient from the mix.

Now, onto the main ingredients.  Here’s how I prepared them.

A) Julienned the cucumbers, bell peppers and carrots and keep them separated.  I cut all of them in approximately 2-inch length. Set aside.
B) Prepare a large bowl of ice water and have it close by.
C) In a large sauce pan, bring the water to a boil.  Blanch the carrots for a minute or two until crisp tender, depending on the thickness.
D) With a slotted spoon, remove the carrots into the prepared bowl of ice water to stop the cooking process.
E) Place the carrots onto a clean kitchen paper towel and gently pat them dry.  Set aside.
F) In the same pot of hot water, let the water return to a boil.  Cook the noodles until el dente, according to the package’s instructions.  Mine were done in only 3 minutes.  Remember, fresh noodles cook a lot faster than dried ones.  When the noodles are done, drain them in a colander and pour iced water over the noodles to stop the cooking process.

Last but not least, toss the noodles with the rest of the ingredients along with the dressing and enjoy.  Keep in mind, the noodle taste even better when it’s well chilled.  So, they actually taste better the next day.  The Dijon and Sesame Dressing is truly amazing.  It’s fragrant and very flavorful.  The light soy sauce (生抽)gives the dressing the depth and complex of flavors.  Remember to use the light soy sauce and not the dark one.  The dark soy sauce (老抽) is less salty, thicker and much darker in color compared to the light soy sauce.  I usually use the dark one for marinade only or when I need a deeper color in a dish.  Most Chinese supermarkets carry both, so make sure you get the right one.  Quite often, I only see the “light” soy sauce in American market.

This recipe is perfect for summer parties and gatherings.  Be prepared that your guests will all ask you for the recipe after they’ve tried it.  One last tip before you go, if you’re serving this for parties, make it a day ahead of time.  But instead of tossing all ingredients together.  Do what I did.  Spread the cooked noodles on a large plate or platter, then place all the ingredients around the plate in sections as shown in the picture below.  Place the green onions and chili blossom in the middle, then cover with plastic wrap and keep in the fridge until ready to serve.  That makes a more beautiful presentation.  Place the dressing in a bowl, covered and keep refrigerated.  For the party, I doubled the whole recipe.  Also, I serve the dressing on the side for the guests to drizzle as much or as little as they want.

Sweet and Savory Asian Chicken Drumsticks (香甜雞腿)

I’m such a lucky Mom because my kids love vegetables, especially my Son.  I can basically serve all veggies every single meal and he’ll be a happy camper.  You know how pediatricians like to ask what do your kids like to eat.  I was asked that question on my Son’s last check up.  After I listed out the food that my Son likes, the pediatrician made a comment that my Son is a “natural vegetarian!”  Is there such a term for veggie lovers?  I think the Doctor made this term up.  Anyway, I’m not complaining at all.  It’s better this way, rather than imagining myself chasing my Son around the house to feed him vegetables.  (That would be a funny picture! ha...)

However, since the rest of the family are not “natural vegetarians”, we crave for meat quite often.  White meat, red meat, seafood, we eat everything.  But in order for my Son to get some meat intake without a fuzz, these Sweet and Savory Asian Chicken Drumsticks always do the trick.

Ready to get into the kitchen with me?  Come on over!  Oh, just one more thing before we head into the kitchen.  Remember I made this Orange Marmalade with Meyer Lemon a while ago?  I promised to share a Sweet and Savory Chicken Drumstick recipe using this marmalade as a marinade.  And here it is.  I know, it’s been a while, but I figured better late than never, right?  If you need the Orange Marmalade recipe, please click here. 

So, here we go.  First, we need to get the marinade ingredients ready.  There are Fish Sauce, Orange Marmalade, Green Onion, Brown Sugar, Meyer Lemon, Soy Sauce, Ginger, Garlic, Shallots, Sesame oil, Chicken Bouillon, Peprika, Red Pepper Flakes and White Pepper.

Next, the hardest step, dump everything into a large freezer safe ziploc bag and mix them well!  Phew…I’m glad we get this step done and over with.

Next, add the drumsticks into the ziploc bag.  Squeeze out as much air as possible and seal the bag.  Move the drumsticks around so everyone is coated with the marinade.

I keep my ziploc bag of drumsticks in a plastic container (to prevent leakage) and keep it in the fridge to marinade overnight.  When ready to cook, preheat the oven and line a baking sheet with foil.  Place the drumsticks in alternate directions with a little bit space between each one for even cooking.

Another important step, don’t throw away the marinade.  Simply pour it into a small sauce pan and cook it on low heat until the liquid reduced by half.  We use this as a glaze and brush it on the drumsticks at the last 5 minute of roasting.

And here they are.  Sprinkle on some sesame seeds and you’re all set.  I usually serve these Sweet and Savory Asian Chicken Drumsticks with brown rice and steam vegetables.  They are also great with pan fried noodles or noodle soup.

Spicy Chicken Wrap—Lunch for One (with Pictorial)

Since my Baby Girl started school this summer, I’ve got a few hours of “me” time during the day while both of my kids are at school.  Yay…I finally got out of the night owl baking and posting habit, or maybe not.  I still love the quiet time I have at night, it’s just different.  That's my "Happy Hour", if you know what I mean.

What do I do with the “me” time during the day?  Well, there’s something I’ve been planning and working on, but not quite ready for the revelation just yet.  I’ll make an official announcement in the future.  So, besides missing my kids tremendously, I've been spending  more time cooking, baking, taking pictures (food, people, and scenic views, etc), and exercise.  Yup, surprised by the last one?  Me too!

Also, I get to enjoy preparing some simple lunch and dishes that I don’t usually get to make when my kids are around... such as this Spicy Chicken Wrap.  So, don’t be surprised if you see more spicy recipes on my blog in the future.  I love spicy food.  Winking smile Let me show you how to make it.

1) In a small bowl, mix the Japanese Mayo and Sriracha hot sauce together
2) Spread the spicy mayo on a tortilla wrap, leaving an 1/2-inch border
3) Place baby arugula in the center
4) Top with roasted chicken and tomato
5) Top with some radish for some crunch
6) Roll it all up and enjoy

It couldn’t be any easier than this, right?  If you plan to serve this to your family, feel free to double or quadruple the recipe to make enough to share.  If you have young kids or anyone in the family who don’t eat spicy food, substitute the hot sauce with ketchup.  But I really love the spiciness in this wrap, especially pairing with the peppery arugula and radish.  The chicken I used here was a left over roasted chicken drumstick from the night before.  Simply warm it up in the microwave and remove the skin and bone before wrapping .

For all those health conscious Mommy’s out there, this is one perfect entrée to celebrate Mother’s Day.  Hey, I guess we all can use a little help to get ourselves, and figures, ready for the swim suit season, right?  Winking smile If you don’t care about all that, this is still a flavorful and refreshing salad to enjoy in Spring and Summer.

In this recipe, I roasted my own chicken breasts and fried my own won ton strips.  However, you can totally take a short cut by using your favorite rotisserie chicken and ready to serve crispy noodles, such as these.  You can literally put this salad together within 15 to 20 minutes if you take the short cuts.  Mine actually took less than 45 minutes as I did all the prep works (and clean up) while the chicken is roasting in the oven.

Here’s a break down on the ingredients (see picture below). I love the different color, flavor and texture combinations in this recipe.  Crunchy won ton strips, crispy snow peas and lettuce, along with juicy and refreshing mandarin orange, and tender chicken.  The red cabbage and carrot add a bite to the over all texture.  The Creamy Sesame Dressing is divine!  I made extras dressing and store it in the fridge and have it ready in the next 2 days to enjoy.

With a simple and healthy recipe like this, you can relax and have a wonderful Mother’s Day dining in.  I love a healthy and no stress recipe any time over waiting in line at a packed restaurant especially on popular dining out holiday such as Mother’s Day.  Winking smile Yup, in another word, I’m getting old!  hahaha….

Chicken Pot Stickers--雞肉鍋貼/餃子—With Video Tutorial

I’m sure many of you have ordered pot stickers when you dine out at Asian restaurants.  Pot Stickers, 餃子 in Chinese, are dumplings originated in China and widely spread to the rest of Asia.  Pot stickers usually consist of ground meat and/or vegetable filling wrapped into a piece of thinly rolled dough.  Boil or pan fry and serve with a soy-vinegar dipping sauce.  Don’t worry, I won’t make you roll your own dough from scratch today! hahaha….I love the pre-made pot sticker wraps because they are convenient and much thinner than rolling your own dough at home.

Ingredients for these pot sticker are very simple.  In this particular recipe, I used ground chicken with cabbage.  You can definitely use any kind of meat you like, ground pork, turkey, even minced shrimp or a mixture of any two.  Ground chicken and pork fillings are the more traditional ones.  I sautéed the shredded cabbage, let it cool and mixed into the chicken along with other marinates to create the filling.  When you’re ready to wrap the pot stickers, have the following items ready.  From the picture below, going clock-wise starting from the top left, the fillings, a pair of chopsticks (if you get good control of them) or use a spoon to scoop the fillings, a small bowl of water that works as “glue” for the wraps, a lightly floured mat/sheet pan for the wrapped pot stickers to land onto, a piece of napkin (yes, wrapping and filling can get messy sometimes, I rather be prepared) and last but not least, the pot sticker wraps.

Simple enough, right?  Winking smile  And oh, thanks to this fry-steam method, cooked pot stickers are golden brown and crispy on the outside, tender and juicy inside.  Don’t worry, we’ll get into all these juicy details with a video below.  Look at these pot stickers.  Aren’t they calling your name?  They are certainly calling mine….especially I know how scrumptious they are.  I’m so glad I still have another batch in the freezer waiting for me whenever I’m ready to cook them.  Oh yes, they freeze really well and I’ll tell you how to do that in the recipe below.  Best of all, you don’t (and should not) need to defrost them before cooking!

O OLIVE OIL & eRecipeCards Recipe Contest – Part 2–Chicken Satay with Cucumber Relish and Peanut Dipping Sauce

As I promised from the previous post, this is the recipe that I created with the O Tahitian Lime Olive Oil and O Ginger Rice Vinegar.  To read more about the products review and taste test, please refer to the previous post here. 

I was so excited when I was selected to participate in the O OLIVE OIL cooking contest host by eRecipeCards.  I love O OLIVE OIL’s products because of their wonderful quality.  There are so many selections in their line of Citrus Oils products such as meyer lemon, blood orange and clementine, just to name a few, that I would love to try them all some day.  I was so thrilled that O OLIVE OIL sent me the O Tahitian Lime Olive Oil and paired it with the O Ginger Rice Vinegar.  As ginger is such an important ingredient in Asian cooking, I always have some fresh ones on hand.  And limes are bright and refreshing, a very popular ingredient in Malaysian and Thai cuisines.   The lime and ginger is a classic combination of flavor and I just knew what recipe to create when I received the package in the mail.  Let me present to you, Chicken Satay with Cucumber Relish and Peanut Dipping Sauce!
 
Marinate Ingredients

I used chicken thighs in this recipe because my family and I prefer dark meat over white.  But feel free to substitute with chicken breasts or even pork if you like.  This is a very versatile recipe.  The picture above shows all the marinate ingredients.

The O Tahitian Lime Olive Oil helps keep the meat moist and juicy.  It also adds a nice touch of the refreshing lime flavor that complement well with the lemongrass and brightens up the flavor.  The O Ginger Rice Vinegar helps tenderize the meat as well as adding a wonderful earthy ginger flavor to the marinate. 

The picture #1 below shows you how to trim the lemongrass.  Only use the middle inner white tender parts from the stalk.  It’s a super simple marinate because all you need to do is put everything in a small food processor (as shown in picture #2 below) and press the button!  How easy is that?  Winking smile  The key to cut the chicken is to have them all in similar sizes so they cook up evenly on the grill.  Marinate the meat for at least 2 hours or over night, and thread them on some bamboo skewers when you’re ready to start the grill.

While the chicken is marinating, let’s get the cucumber relish ready.  The picture below shows you the simple ingredients that you’ll need for the relish.  The pungent and bold flavor from the O Ginger Rice Vinegar really shines through in this relish.  The O Tahitian Lime Olive Oil keeps the relish smooth and adds a nice citrusy and exotic lime flavor.  I used English cucumber here because the skin is tender and crisp so that you don’t have to peel it.  The red onion adds a nice sweetness to the relish which balanced well with the lime flavor and the tartness from the rice vinegar.  I seeded the chili so the relish only has a hint of spiciness.  If you preferred a more spicy version, you and leave the seeds in or use 2 chilies.

Cucumber Relish Ingredients

Up next, the famous peanut dipping sauce that goes hand in hand with the satay!  There are only a few ingredients, as shown in the picture below, but the result is amazing!  I love the olive oil in the dipping sauce which gives the sauce a velvety texture.  My hubby preferred a smooth dipping sauce so I used the creamy peanut butter.  Feel free to substitute with crunchy peanut butter if you prefer a bite/crunch in your dipping sauce.

This is such a fun recipe to make, to serve and to enjoy.  If you’re looking for a recipe to impress your guests during holiday gatherings, this is the perfect recipe for you.  You might want to double or even triple the recipe though.  Because your guests are going to go back for more.

Right before serving, I drizzled a little O Tahitian Lime Olive Oil on the chicken satay.  The olive oil adds a bright, crisp and refreshing flavor to the satay and balance well with the strong spices from the marinate.  The chicken is juicy, moist and succulent.  The flavor is amazing and divine.  Earthy and warm from the ginger and curry, yet bold and refreshing from the hint of lime and lemongrass.

The cucumber relish is crunchy, crisp and refreshing.  It’s the perfect paring for these chicken satay.  It helps with your appetite and you might find yourself keep wanting more and more.  Smile with tongue out Or, maybe that was the excuse I used to eat more.
