Can’t believe we’re stepping into the month of July already! Despite the soaring hot temperature in Southern California, July also means celebrating birthdays in our family. There are a couple of birthdays happening this month and one of them is my Baby Girl’s.
The Birthday Girl gets to pick her favorite birthday cake and this one is her choice for this year. It’s perfect for birthday celebration during the summer because it’s a gorgeous "no-bake" cake. Like Mother like Daughter, you have very good taste, Baby! For this special occasion, Mommy is also making Baby Girl’s favorite dish, Tomato and Egg Stir Fry (蕃茄炒蛋). It’s a very refreshing and appetizing dish to enjoy especially in the summer months. This dish is slightly sweet, a little bit tart, and perfectly savory at the same time. Like most Asian recipes, this dish has a well balanced flavors. It’s a very popular everyday homemade dish from Hong Kong. As you can see, I didn’t just stop there, I paired it with the super adorable Hello Kitty Rice, another favorite of my Little Girl. Although Mommy herself is not really a Hello Kitty fan, she did enjoy making this dish as she knows how much the Birthday Girl loves it. I am secretly wishing the boys in the house are as easy to please as Baby Girl does! Shhh….

It’s easier to make than it looks, especially the shaped rice. Best of all, you don’t need any mold or special equipment to make it, except for a pair of kitchen scissors and a few minutes of your time, and your love of course. You can also make this dish with your kids together. My Baby Girl always enjoy creating fun dishes with me in the kitchen and this is definitely one of her favorite ones to make.

Hello Kitty Rice with Tomato and Egg Stir Fry 吉蒂貓飯配蕃茄炒蛋
Makes: 2 servings
Ingredients for the Tomato and Egg Stir Fry:3 Organic Roma Tomatoes, cut in wedges
3 large organic brown eggs, slightly whisked with a pinch of salt
1 tablespoon vegetable oil, divided
1/4 cup organic ketchup
1/2 teaspoon sugar
1/4 teaspoon kosher salt
2 tablespoons cold water
1/2 teaspoon corn starch
1 green onion, chopped
Ingredients for the Hello Kitty Rice:1 1/2 cups cooked rice
1 Organic Roma tomato, for bow-tie and heart
1 small Nori (seaweed), for eyes and whiskers
2 small corn kernels, for noses
To Prepare the Tomato and Egg Stir Fry:In a small bowl, mix the cold water and corn starch together. Set aside.
In a medium skillet, heat over medium heat and add half of the vegetable oil. Fry the eggs while turning them with a spatula until 80% cooked through. Remove from heat and set aside.
In the same skillet, add the remaining oil and turn to high heat. Add the tomato and cook until soften, toss tomatoes occasionally while cooking. Add sugar, salt, and ketchup and stir well.
Add the corn starch mixture and cook until sauce comes to a boil. Add the cooked eggs and gently toss together until eggs are cooked through. Remove from heat, sprinkle with green onions, and transfer to 2 serving plates.
To Prepare the Hello Kitty Rice:Cut around the Roma tomato to remove the skin and flash, discard the seeds in the middle (or eat it as a snack, we don’t need it in this recipe). With a small pair of kitchen scissor, cut tomato flash into 4 tear drop shapes and 2 small circles for the bow ties. I cut an extra heart shape for garnish as well.
Cut Nori into 4 small oval shapes for eyes. 8 small thin strips for whiskers.
Place half a cup of cooked rice on a plastic wrap. Gently shape the rice into an oval shape for Hello Kitty’s face. Place the rice onto the serving plate. Place a teaspoon of cooked rice on the same plastic wrap and shape into a small triangle. Transfer to the serving plate as Kitty’s ear, repeat to make one more for the other side.
Place another teaspoon of rice onto the plastic wrap and twist into a ball for Kitty’s hand. Repeat to make one more the other side. Place the rice balls right below Kitty’s face.
Place the tear drop shaped tomato onto the right side of Hello Kitty’s ear. Place the circle shaped in the middle to create the bow-tie.
Carefully place the oval shaped Nori on Kitty’s face as the eyes, and 4 strips of nori as whiskers on the cheeks.
Place the corn kernel in the middle for Hello Kitty’s nose. Place the heart shaped tomato in the middle between Kitty’s hands. Repeat to make one more plate. Admire them for a few seconds and enjoy.
