If you have had your fair share of deviled eggs in the past, you’ve got to try out this recipe for a change. The wild smoked salmon in this recipe truly bring this classic party appetizer to a whole new level! The smokiness and gourmet flavor of smoked salmon is amazing. The mild onion aroma from the chives and the lemony dill are just perfect companies to the salmons.
Of course, I didn’t just stop there either! These decadent Smoked Salmon Deviled Eggs are topped with salmon eggs (roes) for the finishing touch! As much as I love sushi and sashimi, I’m not a big fan for salmon eggs in the past! That was true until after I had my very first bite of this gorgeous treat! The salmon eggs add a little pop and saltiness to these creamy and silky deviled eggs. The flavors and aromas are well balanced in this little jewel-like appetizer!

We’ve been enjoying the warmer weather of Spring here in Southern California. Well, it’s actually more like Summer temperatures! It’s nice to see some sunshine rather than rain storms for sure. Today, I have a fun and adorable recipe to share with you to welcome Spring! Check out these Easter Bunny Vanilla Bean Cupcakes! Yes, they sure are perfect for the Easter celebrations as well.
Check out my video tutorial above if you haven’t done so. I’ll walk you through, step-by-step, on how to make these cuties, including the Bunny Butt White Chocolate decorations on top of these cupcakes. They are filled with Oreo cookie crumbs inside! Just the white chocolate alone makes a delicious treat.
The base is a Vanilla Bean Cupcake that I made from scratch. These cupcakes are surprisingly easy to prepare and they turned out fluffy, light, and moist! Best of all, this recipe makes exactly 12 cupcakes! You can easily double or triple the recipe if you’re making them for a party.
These cupcakes are topped with a Sweet Vanilla Bean Frosting. I piped the frosting with a Wilton Grass piping tip to mimic the fluffy fur of the bunnies. I’ll list the tools that I used at the end of the post for your reference. If you have a sweet tooth, this is a wonderful smooth and sweet frosting that you’re going to love. But if you prefer a not-too-sweet frosting, you can actually use my Swiss Meringue Vanilla Bean Buttercream recipe instead. Click here to check out that recipe if you’re interested.
See how light and fluffy the cupcakes and frosting turned out!? Each bite is packed with vanilla goodness. You’ll be amazed by how combining a few simple ingredients can turn out to be something so scrumptious!
Here’s the inside look of the Oreo filled white chocolate bunny (see picture above). As I said, it’s super cute and delicious on its own. But they sure make the most adorable topper for these cupcakes.

Easter Bunny Vanilla Bean Cupcakes: Makes 12 cupcakes Ingredients for the Oreo Filled Bunny Butt White Chocolate:
6 ounces of white chocolate
6 Oreo Cookies, finely crushed
1/2 teaspoon lemon extract
1/2 teaspoon pink luster dust
To Prepare the Bunny Butt Chocolate:
Temper and melt the white chocolate (https://goo.gl/Tevin2). Fill the bunny candy mold with a teaspoon of melted chocolate. With the back of a spoon, spread the melted chocolate to coat the mold.
You only want a thin layer of chocolate, carefully spoon out any excess. Let it set at room temperature for a few minutes. Apply a second coating of chocolate into the cavities of the mold.
When chocolate is completely set. Fill each cavity with half a teaspoon of crusted Oreo. Top the Oreo with remaining white chocolate and let chocolate set completely. Invert the mold and the chocolate should come out easily.
In a small dish, mix the lemon extract and luster dust with a small cake decorating brush. Paint the paws of the bunny chocolate with the pink luster dust mixture. Store in air tight container until ready to use.
Ingredients for the Vanilla Cupcakes:
1 3/4 cups cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
a pinch of kosher salt
1/2 cup sugar
3/4 cup milk
1/4 cup vegetable oil
4 tablespoons melted butter
1 tablespoon plain yogurt
1 large egg
1 teaspoon vanilla bean paste To Prepare the Vanilla Cupcakes:Preheat your oven to 350F. Line a cupcake tin with cupcake liners.
In a large measuring cup, add milk, oil, butter, yogurt, egg, and vanilla bean paste. Whisk until well combined. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment, add the flour, sugar, baking powder, and salt. Turn mixer on low speed and mix for a minute to combine.
Add the milk mixture into the stand mixer in a slow and steady stream. Scrape the sides and bottle of the bowl and mix for another 20 seconds.
With a large ice cream scoop, fill each cupcake liner 3/4 of the way. Bake for 20-25 min or until a toothpick inserted comes out clean. Cool cupcakes on a wire rack completely before frosting. Ingredients for the Fluffy Vanilla Bean Frosting:12 tablespoons softened unsalted butter (room temperature)
3 cups powdered sugar
1 tablespoon milk, room temperature
1 teaspoon vanilla bean paste To Prepare the Fluffy Vanilla Bean Frosting:In a large bowl, sift powdered sugar and set aside.
In the stand mixer fitted with the paddle attachment, beat the softened butter for 5 minutes until fluffy and pale.
Add half of the powdered sugar and whisk well. Scrape the sides of the bowl and add in the remaining half of the powdered sugar. Add milk and vanilla bean paste. Continue beating the frosting for another 5 minutes or until light, smooth, and fluffy. To Assemble:
Place frosting into a large piping bag fitted with the Wilton #233 grass icing tip. Fill the pastry bag with frosting and pipe frosting onto the cooled cupcakes. Top with decorated bunny chocolate and bunny ears tooth picks. Enjoy!

It’s such a lovely time to celebrate; the meaning of new life, the warming up of temperature, and the aroma of the blooming Spring flowers, etc. Today, I wanted to share with you a beautiful Easter Sunday Brunch Recipe that you can prepare for your family. Check out the Ham and Egg Savory Crepes video tutorial above if you haven’t done so. I’ll show you step-by-step on how to prepare these crepes and assemble them together.
Of course, this recipe is probably good all year around, and not just on Easter. But the gorgeous and slightly runny egg yolk in the middle simply reminds me of Spring and Easter. Best of all, you can prepare the crepes the day before. So, when brunch time rolls around, you can assemble and bake these off in no time!
Besides ham and egg, I also used some smoked mozzrella cheese in these savory crepes. You can use any grated cheese that you like, such as gouda, cheddar, or even goat cheese. Pretty much any cheese that you like that melt nicely when heated up.
The bake time in this recipe is important because you want to make sure the egg whites are cooked and the yolks stays runny. I baked my crepes for exactly 12 minutes with room temperature, large size eggs. If you use larger eggs or taking the eggs out of the fridge right before baking, they might take a minute or two longer to cook. Simply check on the crepes at 12 minutes mark on their done-ness and determine if they need additional bake time.

Let me tell you a secret (or 2)! These beautiful decorated eggs are super easy to make and there’s no real eggs involved! Shhhhh….no one has to know that they are so easy to make. Hey, I always say I’m not a crafty person! But if I can make these gorgeous eggs, so can you!
So, here are a few things that you will need for this project. First of all, the Dyeable Craft Eggs, of course (see picture below). I got them from a local craft store and they are super realistic! The shells’ texture really feel like the texture from the real eggs! Honestly, I thought of making these decorated eggs with the real eggs by emptying the egg whites and yolks from the shells, clean up, dry out, etc. But, the real eggs shell are so fragile and probably won’t last as long as these craft eggs. So, craft eggs win! Also, you’ll need a few floral printed paper napkins, a pair of scissors and some decoupage glue. The decoupage glue that I used already comes with a brush attached inside the cap, so convenient! You can also get a nest from the craft store to put the eggs in, but that is totally optional. These eggs will look just as beautiful in your Easter baskets, or anywhere, really!
One more tip, when you choose your floral paper napkins, try to get one that has the white background. They will come out seamlessly when you put them on the egg shells. Here we go, check out my video tutorial below on how to make these gorgeous eggs!

I adore spring. It’s one of my favorite season of the year. I love seeing my newly planted herbs starting to sprout; the longer day light extended till after dinner; the cute (or more often creepy) Easter Bunny at the photo booth in the Mall; and the excitement in my Kids’ eyes when they go for the Easter Egg hunt! It’s a season to play, enjoy and celebrate. So, to celebrate this lovely season, I created these Flower Garden Cookies to share with you.
The base cookies themselves are similar to the texture of sugar cookies, and I flavored them with dried and grounded lavender buds, lemon zests and rose extract. They are packed with the elegant floral aromas with a hint of refreshing citrus. I top the cookies with some white chocolate mixed with Matcha green tea, which acts as “glue" for the bunny as well as mimicking the “meadow in the garden”. Then, I decorated each cookie with a dressed up chocolate bunny, a chocolate egg, lavender buds, a dried tea rose, and some rose tea petals (broken apart from the tea roses). I packaged these Flower Garden Cookies individually and shared them with some of my my Baby Girl’s classmates as a way to say thank you for their kindness. The kids loved them and I was so happy that they enjoyed these cookies so much! You can use these gorgeous cookies as party favors, center piece for your spring party, a place card holder (between the bunny and the egg) for your next Easter gathering, or just because. Easter is just around the corner. I truly adore this time of the year as Springs symbolized growth and new lives. (In case if you wonder...NO, I'm not pregnant, I'm just referring to my plants in the garden!) Another great news for foodies? It’s the strawberry season! Although I pretty much get strawberries all year round in California, I know many of you had been looking forward to the strawberry harvest time for a while. The inspiration for these Lemon and Strawberry Cream Sandwich Cookies? The Easter bunny of course. And I love pairing strawberries with lemons, as the refreshing and citrus aroma compliment well with the sweet and tart strawberries. Okay, these are not exactly Easter bunnies as you might already knew. It’s a very famous children books/cartoon character called Miffy. I added some almond meal (almond flour) in the cookie dough for a hint of nutty flavor. The cookies are packed with lemon zests and the lemony aroma truly shines through in these cookies. The cookies alone are wonderful and makes perfect ice cream toppers, such as this one. The strawberry cream filling is one of the easiest fillings I've ever made. Yet, it’s packed with wonderful strawberry goodness and flavor. Both the cookies and strawberry cream are not overly sweet. But if you like yours sweeter, feel free to add a bit more powdered sugar when you make the fillings.
I can’t wait to take my Kiddos out to the annual Easter Egg Hunt. I know, that sounds like a big even/outing. Actually, we usually just “hunt” the goodies packed plastic eggs at the backyard.
