How to Make Chocolate Orange Bundt Cake - Super Easy Recipe



Last month, I celebrated my birthday, my 29th birthday!  Oh wait, I think I’m just getting too old that I simply stop counting since my 29th birthday!  What did I do on my birthday?  Besides enjoying a lovely dinner with my family in the evening, I baked myself a birthday cake!  This Chocolate Orange Bundt Cake, to be exact.

Some of you might think that it’s not right that I have to bake my own cake for my birthday.  But actually, I don’t mind at all.  In fact, it’s quite the opposite.  I quite enjoy spending time in the kitchen, even on my birthday!  Plus, this Chocolate Orange Bundt Cake is super easy to prepare, I promise.  It’s pretty much a foolproof recipe to any beginning bakers out there.  It’s super easy to make, thanks to this secret ingredient!  Although this secret ingredient doesn't usually show up in my pantry (as I mostly bake from scratch), it is easy to find and it might appear in the pantry of many homes!  Watch my video tutorial above to find out what it is!

This cake turned out to be very moist and tender.  It’s packed with decadent dark chocolate flavor and refreshing orange zest.  Dark chocolate and orange flavors are simply the perfect classic combination, in my humble opinion.  I made a chocolate crust on top for a contrast of texture as well.  Each bite, is simply heavenly!  If you’re still looking for a dessert recipe to end your Valentine’s Day dinner with the perfect sweet note, this is THE recipe to make!

How to Make Chocolate Lava Cakes 朱古力心太軟



What is your all time favorite dessert?  Let me rephrase it.  If you can only enjoy just 1 type of dessert for the rest of your life, what would you pick?  I’m sure my whole family would have the same answer….THIS, Chocolate Lava Cake 朱古力心太軟!

If you get to taste this cake, I’m sure you would have agreed to my previous statement.  This Chocolate Lava Cake is rich, decadent, and so satisfying.  The edges of the cake is slightly crunchy, similar to the edges of a good brownie.  And the center of the cake is light and tender.  When you spoon into the cake, you’ll see the warm chocolate 'lava' oozing out!  The cake itself is not overly sweet but definitely rich and deep in chocolate flavor.  I love pairing it with a scoop of homemade Vanilla Bean Ice Cream for a contrast of temperature and texture.

This cake might look fancy and difficult to make, but it’s quite easy to prepare.  I have a foolproof recipe for you and if you follow my tips and tricks in the video tutorial, you can definitely make it too.  If you make this dessert for your sweethearts, you’ll definitely melt their hearts!  Shhh….no one has to know it’s actually so easy to make.  Let them think you spend all day in the kitchen to make this for them!  Since this recipe yields 4 cakes, it might be too many for a romantic dinner for 2.  If you are not planning to bake all 4 cakes, you can prepare the batter the same way and keep unbaked ones in the ramekins in the fridge until you are ready to bake.  So, if you’re planning a romantic Valentine’s Day dinner at home, you can prepare the batter ahead of time and bake off the cakes at a later time.

When I serve these Witch’s Fingers, my Little Boy likes to dip them in strawberry preserves for a bloody effect!  My Baby Girl is a bit less graphic, she chose a mud puddle, a.k.a chocolate sauce as her dipping option!  Either way, these cookies are super fun to eat and just as finger licking good as-is.

These Witch’s Fingers are perfect for Halloween Party.  Last year, I packed them up to share with some school friends and they were a big hit!  You can make them a day or two in advance and store them in an air-tight container.  They stay fresh for at least 5 to 6 days if you store them well without direct sunlight.

How’s your Halloween planning so far?  Do you or your kids dress up?  It’s was such a surprised that my Kiddos have decided so early on what/who they want to be this Halloween.  It’s even more surprising to me that I’ve their costumes already prepared!  They only need a few final touches here and there and that’s it.  Yes, this year's costumes are partially handmade.  But luckily, nothing too complicated.  Phew…. just a side note, I’m just happy that the kiddos are not into scary costumes, at least not yet!

Chocolate Cupcakes with Swiss Meringue Buttercream Flowers - Featuring Russian Piping Tips



Have you heard of Russian Piping / Icing Tips before?  They are my latest discovery and obsession!  Think about it, for someone who is not very good at decorating with buttercream and frosting, I actually managed to create these gorgeous flower cupcakes!  It’s got to be a foodie blogger’s dream comes true!

The piping tips are quite easy to use and the results are simply stunning!  Look at these cupcakes for a second, aren’t they gorgeous?  I say they are definitely the most beautiful cupcakes that I’ve ever created!

The icing/piping tip set that I’ve got online comes with 10 metal tips, and one plastic tip that allow you to put 3 different colored icing in 1 pastry bag.  In this recipe and video tutorial, I’m only testing 2 of them and the rest have got to wait for another time.  The 2 piping tips I used for this post are the roses and tulips shaped ones.  The buttercream flowers that I created using these piping tips are simply breath taking!  If I can do it, anyone can definitely do it as well!

Besides trying out new icing tips, I’m also testing out these “Color Cups” cupcake liners for the very first time.  I’m definitely in love with them.  As you can see, the cupcake liners truly stay vibrant even after baking!  They are just as easy to use when compared to everyday paper cupcake liners.  They are only slightly more expensive than the regular liners. In my humble opinion, they are totally worth the extra bucks especially if you’re baking for parties and gatherings!

These cupcakes are simply scrumptious!  The cupcakes are dark chocolate cupcakes using my favorite Valrhona Unsweetened Cocoa Powder for the deep chocolatey flavors.  The cupcakes are super easy to put together and they are moist and fluffy!

The cupcakes are topped with Vanilla Bean Swiss Meringue Buttercream that are smooth and silky!  I dyed it into 4 different colors using some store-bought all-natural food coloring.  You can see all the products that I used in today’s video tutorial above and I’ll also list them out at the end of this post for your convenience!  If you’re not sure about creating your own gorgeous cupcakes for your next tea party or for someone’s birthday, think again!  These Russian Piping Tips definitely boosted my confident in cake/cupcake decorating and I can foresee more cupcakes in my kitchen in the near future!

“Surprise Inside” Chocolate Bundt Cake With Strawberry Glaze - Valentine’s Day Dessert




Do you like surprises?  I think it’s a lot of fun and quite exciting to get a pleasant surprise from family and loved ones.  This Valentine’s Day, why not give your significant other a sweet surprise?  Let me present to you this gorgeous and delicious “Surprise Inside” Chocolate Bundt Cake With Strawberry Glaze!

I’m not sure why, but chocolate and strawberries always make me think of Valentine’s Day!  In my humble opinion, I think they compliment each other really well.  To me, they are both romantic and sexy ingredients!  So, why not combine the two together for Valentine’s Day desserts, right?

Check out my video tutorial above and I’ll walk you through step-by-step on how to make this amazing cake.  First, I started working on the “surprise” part of the cake, which consists of 2 sheets of strawberry cakes.  I added my homemade beet root natural food coloring to (try to) turn the cake pink.  However, the pink hue slightly faded after the first round of baking.  And the coloring mysteriously disappeared completely after the 2nd round of baking inside the bundt cake!  Oh well!  So, you might want to add more coloring than I did.  I’ll post the details and suggestions in the recipe below for your reference.

Even though the heart shaped cake inside didn’t stay pink as I intended it to be, it’s still a gorgeous and stunning cake to serve and enjoy.  And it’s really a surprise when you slice into the cake to reveal the heart shape inside!  Just keep in mind that when you add the heart shaped cake into the bundt pan, make sure to put it up-side down as it’ll be the right direction after you flip the bundt cake over.

This chocolate bundt cake is rich in chocolate flavor and really moist!  I’m using my favorite Valrhona cocoa powder in the cake batter.  I’ve tried so many different brands of cocoa powder in the past, but seriously, Valrhona is the best!  In case if you’re wondering, no, this is NOT a sponsored post.  I just love this product and wanted to share with you.  So you don’t have to waste your hard-earned money on ingredients that don’t work as great!  I’ll list the ingredients below this post for your convenience.  The fresh strawberry glaze on top of this cake is really refreshing and delightful.  As I said, chocolate and strawberry really compliment each other well.

Classic Tiramisù – For Valentine’s Day



Have you check out my last blog post and video on how to make the parchment pastry bag and white chocolate decorations?  If not, click here to check it out!  I’m very excited to share today’s recipe with you.  It’s one of our family’s all time favorite dessert: Classic Tiramisù!

Tiramisù is an Italian (no-bake and layered) dessert usually made with ladyfingers, espresso, rum, egg yolks, mascarpone cheese, and cocoa powder, etc.  Check out my video tutorial and you’ll see how easy it is to prepare.  If you have concern consuming raw egg yolks, you may use pasteurized egg yolks instead.  You can find them in most major supermarkets in the States.  This Tiramisù is packed with wonderful espresso and chocolate flavors, along with a hint of rum.  We love this dessert because it’s not too sweet and has the right balance of flavors.

Tiramisù means “pick me up” in Italian.  Why?  Because it’s texture is tender, soft, and fluffy.  The mascarpone cream in between the layers is silky smooth and melts in your mouth.  To ensure your cake will have the right texture, you need to start with the right ladyfingers.  Make sure to use the crispy one from Italy and not the soft, cake-y one from the U.S.!

Also, be sure to check out my video tutorial on the “dipping time”.  Last but not least, after assembling the cake, let it rest in the refrigerator for at least 8 hours before serving!  I usually leave it in the fridge overnight.  That way, the ladyfingers will have enough time to soften and soak in all the flavors from the other ingredients.  Trust me, your patient will be rewarded!

Classic Chocolate Glazed Éclair



Do you love pastries?  My family is definitely a huge fan of pastries!  We love all sorts of pastries, ranging from doughnuts, cupcakes, to scones and cookies.  However, among all these pastries, éclairs is probably on top of our list of favorite pastries.

This classic éclair recipe consists of the basic Choux Pastry, which is similar to the cream puff shells.  I filled them with the decadent classic vanilla bean pastry cream.  The pastry cream is slightly sweetened so that you can truly taste the sweet aroma of the vanilla bean.  I then top these éclairs with a simple dark chocolate glaze that brings a hint of bitterness to compliment the pastry cream beautifully.   You can also use milk chocolate for the glaze as well if that’s what you prefer.  My kids love dark chocolate (I guess that runs in the family), so that’s pretty much my default preference.

I love that you can see all the little specks of vanilla bean seeds throughout the pastry cream inside (see picture below).  Isn’t it gorgeous?  I’m telling you, they tasted even more amazing than their look!  If you haven’t done so, please check out the video tutorial at the top of the post.  It’s definitely easier to prepare than they look!  I’ll list the ingredients and tools used in this recipe at the end of the post for your convenience.

Double Chocolate Sandwich Cookies 黑白朱古力夾心曲奇餅:



One of our favorite summer activities is cooking and baking at home.  However, My Baby Girl is obviously way more interested in the cooking and baking, way more than my Little Handsome does.  Quite often, she got to select our baking projects.  And you probably know by now, bunny is one of her favorite animals.  Click here, here, and here for other bunny treats that we’ve made so far!  Here comes the BIG question!  How will you eat these cookies?  Will you start from the ears?  Or will you bite on the little cutie pink cheek first?  Either way, these are super fun to eat and super fun to make as well!  Not to mention, they are so adorable and almost too kawaii (cute) to eat, almost!  How about we do a little bunny cookie eating personality test?

Bunny Cookie Personality Test:  Where will you start first?

Ears First:
If you nibble on the ears first, you’re a practical, organized, and traditional person.  You value security and you’re extremely loyal.  You might be a little impatient at times but everyone loves you!

Cheek First:
If you start with the cheek first, you’re the type of person that tends to take the roads that are less traveled.   It's not necessarily means that you’re an innovator.  It’s probably due to the fact that you don’t want to be predictable.  A bit cautious, perhaps, or even a little...sneaky!?

Eating the whole cookie all in one bite:
You’re restless, independent, and always on the go.  People can count on you to get the job done.  You also have a delightful personality and make friends easily.  You're definitely a fun person to be around.

Smelling It First:
If you would smell the cookie first before taking a bite, you’re a bit cautious. Isn't that obvious?  You always think twice before you act.  You have high standards and detail oriented.  You’re polite and very well mannered.

Chin First:
If you eat the bunny’s chin first, you are a very caring and nurturing person.  You also need assurance that you are loved.   A little insecure, perhaps?  You’re afraid that people might take advantage of you or take you for granted.  But if you found that right person, you’ll love them unconditionally.  

Breaking the cookie In Half:
Breaking the cookie in half is pretty much a reflection of how you live your life. “Half full” being a bit skeptical or pessimistic about things.  You do have a great sense of humor and you are a great friend to others.

Okay, now you know what kind of a person I am!  LOL….. Anyway, this test is just for a little fun.  Please don’t take it too seriously!  However, I would appreciate that you leave a comment below and tell me your "choice of body part" to bite into, and if the test results are accurate!

So, head to the kitchen and bake these bunny cookies!  These are very easy to make with no mixer and/or machine needed at all!  However, please use good quality Dutch-process cocoa powder for this recipe.  It’ll give you the deep, dark, and rich chocolate flavor that you can’t get from other cocoa powder.  After trying so many different brands of cocoa powder, Valrhona is my personal favorite.  I’ll list the ingredients and tools below for your reference!  Stay tuned for more fun recipe next week.  Thanks for stopping by and take care.
