Chocolate Bubble Waffle (Eggette) Cone Ice Cream 朱古力雞蛋仔雪糕



Have you seen this Bubble Waffle Cone Ice Cream before?  I’m sure most of you had by now.  If not, you're in a treat today!  Apparently, it’s one of the latest food trend!  However, the bubble waffle itself  (Eggette 雞蛋仔) is no stranger to me!  It’s one of my favorite childhood street food from Hong Kong!  You can click here to check out my recipe and video tutorial on how to make the original/traditional version.

Today, I want to share the recipe of a chocolate version of the bubble waffle with you.  They are delicious on their own, crispy on the outside and tender on the inside.  I used my favorite Valrhona cocoa powder for the waffle batter, so that they are packed with wonderfully deep, dark chocolate flavor.  After making the bubble waffle, I shape it into a cone shape while it’s still warm, by placing it into a cone shape wire rack (to hold its shape.)  The bubble waffle will turn crispy once it’s completely cooled.  I love this wire rack not only because of its shape, I am also re-using it as a serving rack for this dessert dish as well.  Not to mention that this rack was meant to be a french fries holder to begin with!  Hey, I love my kitchen tools that can multi-task!  I’ll list the information of this cone shape wire rack and other tools/ingredients that I used at the bottom of this post for your reference.

As you can see from my video and pictures, I filled the waffle cone with chocolate ice cream, freshly whipped cream, chocolate sauce, sprinkles, a cherry, Pocky sticks and a mini chocolate cupcake!  It’s a mouthful just to list the ingredients, however the taste of this chocolate overload is surely wonderful and out of this world delicious!  Without a doubt, it’s a glorious and outrageous dessert to make and enjoy!  Seriously, outrageously good!

All along, I thought my family is chocoholic!  The darker, the better!  However, since the day that I’ve made this Vanilla Swiss Roll, they’ve been asking me to make this cake, over and over again!  Seems like they’ve forgotten the chocolate option for this cake, which used to be their favorite!

There’s something about this basic vanilla cake that we all love.  I guess it’s just the simplicity that wins us over.  It’s made out of just a few basic ingredients that you probably have already in your pantry.  And you can simply taste each one of them, such as the sweet and slightly floral vanilla aroma, the rich and decadent egg flavor, and the silky and smooth freshly whipped cream, etc.

If you haven’t try any of my Swiss Roll recipe just yet, I’m sure this is the time to do so.  It’s basically a foolproof Swiss Roll Cake recipe that assures you the ease of rolling up your cake nice and easy without any cracks.  The cake texture is light and silky smooth.  Each bite melts in your mouth in heavenly goodness!  I wish I can share this cake with you by passing a slice through the monitor.

Are you all enjoying the lovely Fall weather?  I certainly hope so.  Somehow, Fall makes me craves for comfort food.  Maybe it’s the chilly and rainy weather?  Or, maybe it’s the fragrant in the air that makes me long for something familiar.  And my definition of comfort food are something that’s easy to prepare, something that I feel satisfied after eating, and something that brings back childhood memories.  And this, Cream Corn with Chicken Over Rice (忌廉粟米雞粒飯) falls into all these criteria!

This Cream Corn with Chicken Over Rice dish is a popular dish that I grew up eating, quite a lot!  Ask anyone who grew up in Hong Kong, they would know about this dish and probably have many different memories associating with it.  Not only it’s a popular dish to serve at home, it’s almost always on the menu of the Hong Kong Style cafes.  But since it’s super easy to make at home, why bother eating out, right?

If you haven’t try this dish, I highly recommend that you give this a try.  It’ll probably be your new favorite dish to make.  It’s perfect for weeknight dinner, especially when you only have 20 minutes to put dinner on the table! ha!  So, I always marinate the chicken the day before so that I’ll have it ready to go.  Also, I always double the recipe as it’s even better the next day…or just in case, the kiddos ask for seconds!

Have you ever created something by "accident"?  That seems to happen in my kitchen all the time!  This Minced Beef Lettuce Boats (免治牛肉生菜船) is one of them and I just have to share the recipe with you.  It's now my Little Boy's favorite dish to have for dinner!  This dish was transformed from the Minced beef over rice dish!

Minced beef over rice (免治牛肉飯) is a very popular dish in Hong Kong (my home country).  It's one of my favorite childhood dish to cook and enjoy.  Not only it's quick and easy, but super duper yummy as well.  I love to top mine with a sunny side egg with the yolk still runny!  Oh my!  I know my Hubby couldn't agree more!

When I'm in a hurry to put dinner on the table, the minced beef over rice dish is one of my go-to favorites.  On one of the nights when I was cooking this dish, I was also looking for veggies that I can prepare quickly along with my minced beef.  Unfortunately (or should I say, fortunately!?), the only veggie found in the fridge was romaine lettuce, which was intended for salads.  So, I simply washed the lettuce, and serve them on the side.  Boy, as soon as I put the cooked minced beef and a plate of raw lettuce on the table, the kids were getting excited.  That's definitely something they don't see everyday!  The fun part about this dish was that the kids get to "play with" their food, sort of.  So, I usually let the kiddos pick up a lettuce leaf, spoon the minced beef on top to create the "boat" and let them go to town!  Can you imagine the fun?

Without further ado, here's how I made the minced beef.


1) In a large skillet, heat oil over high heat until hot. Add the ground beef into the skillet.

2) With a rubber/wooden spatula, break the ground beef into small pieces while cooking. Brown the ground beef until cooked through.

3) Meanwhile, add Montreal Steak Seasoning, garlic powder and sugar, stir to combine.

4) Remove cooked beef to a large bowl, set aside.

5) In the same skillet, add the onion and cook until translucent, about 5 minutes.

6) Then, add the beef base, soy sauce, and sesame oil, stir to combine.

7) In a small bowl, mix the corn starch and cold water together. Stir until no lumps.

8) Return the cooked ground beef into the skillet.  Add the corn starch mixture into the skillet, stir to combine. Cook until the sauces returns to a boil. Remove from heat.  To serve, spoon minced beef into each lettuce leave and serve. Or, you can serve the minced beef over steam rice.

My Hubby still prefer his Minced Beef spooned generously over steam rice and top with a sunny side up egg.  For me, I love both serving styles just as much, depending on the mood of the day.  But for the kiddos, they're definitely voting on the boats!  Give this recipe a try, I'm sure the kiddos (and grown ups) in your house would love it just as much.  It's a great way to get them to eat more veggies, too.
