How to Make Holiday Individual Turkey Pot Pie

My family loves the holiday season when we get to gather around the dinner table to share our favorite dishes and recipes.  When I host holiday gatherings at my place, I always prepare a main dish while my family and friends would bring appetizers and side dishes to share.  It's always wonderful to share and create memories with my family through food!  If you can't tell by now, everyone in my family are foodies!  I guess you can say that the apples don't fall far from the tree!  This year, I'll be sharing these amazing Holiday Individual Turkey Pot Pies with my friends and family!




If you haven't done so, be sure to check out my video tutorial above.  This recipe is so much fun and so easy to make, yet its super festive and scrumptious!  Best of all, you can prepare them a day in advance.  Simply prepared the pies (without the egg wash), covered, and keep them in the fridge until ready to bake.  On the day of the party, simply brush the egg wash on the pastry and pop them in the oven before your guests arrive.  This way, you can join in and enjoy the party, too!  As much as I enjoy a holiday feast, I don't think anyone should, or wanted to, slave inside the kitchen for the holidays!  This recipe is a perfect solution for you if you are hosting a gathering for your friends and family this holiday season!  Think of how easy it will be for the upcoming Thanksgiving, Friendsgiving, Christmas, or New Years' parties!   



The flavors of these Holiday Turkey Pot Pies are so amazing that your guests would think that you've spent hours in the kitchen preparing them!  Thanks to the Better Than Bouillon Turkey Base, it adds a depth of flavor in the turkey pie fillings in a cinch.  It truly elevates and transforms the flavors of your ingredients.  You would feel like you're enjoying a traditional slow roasted turkey, but in a pie form, which is a lot more fun to eat than just a traditional roasted turkey (sorry Mr. Turkey!)  Rather than the traditional bouillon cube, the Better Than Bouillon Turkey Base is a paste, which makes it a lot easier to incorporate with the ingredients because you don't have to wait for the cube to dissolve.  The flavor is so concentrated that it won't dilute your sauce at all!  It's truly a flavor bomb, in my opinion!

Holiday Individual Turkey Pot Pie Recipe
Makes: 6 (8 ounces Pies)

4 tablespoons butter
1 yellow onion, diced
1 cup pumpkin (frozen, diced)
1 cup mixed vegetables (frozen)
4 cups roasted turkey (diced)
1 tablespoon sage (chiffonade)
1 teaspoon thyme
1/3 cup all-purpose flour (plus more for rolling puff pastry)
2 tablespoons Better Than Bouillon Turkey Base
2 cups turkey stock (low sodium)
3/4 cup heavy cream
2 sheets puff pastry (thawed)
1 egg yolk
1 tablespoon water
Cranberry Sauce (for serving)
Fresh Cranberries and Sage leaves (optional, for garnish)

Preheat the oven to 425°F.  In a large pot, melt butter over medium heat.  Stir in onions and cook until translucent, about 3 to 4 minutes.
Add in pumpkin, mixed vegetables, turkey, sage, and thyme.  Sprinkle the flour over the ingredients,  stir gently, and let the flour cook for 1 minute.  Add in the Better Than Bouillon Turkey Base and turkey stock.  Let the sauce cook until thickened, about 3 minutes.  Remove from heat and stir in the heavy cream.  Let the fillings cool off slight while you prepare the puff pastry.

Gently roll out the seams of the puff pastry on a lightly flour-dusted surface.  Place your ramekins up-side-down on the pastry as a guide.  Cut out 3 pastry per puff pastry sheet.  Repeat with the remaining puff pastry sheet.

Evenly divide the turkey fillings into the 6 ramekins.  Top each one with a cut out puff pastry.  Place the filled ramekins onto a foil lined baking sheet.  Whisk the egg yolk and water to create an egg wash.  Brush a think layer of egg wash onto each puff pastry.

Bake for 22 to 25 minutes, or until the puff pastry is golden brown and cooked through.

Let cool slightly before serving.  Be very careful, fillings is extremely hot.  Garnish with cranberry and sage (if using.)  Serve these Holiday Turkey Pot Pies with cranberry sauce and enjoy!

It’s a perfect starter kit for someone who loves science and loves to ask why all the time!  Just kidding!  This is a fun starter kit to get into the molecular cooking.  It sure is fascinating and exciting to get your hands on these fun tools!  A perfect starter kit to cook with the curious kiddos as well.



I love my infrared thermometer and I do use it quite often.  I use it when I temper chocolate, make my ice cream base, or when I make candies (yes, ditch the candy thermometer, that thing is a pain to wash!) or when I want to look cool and professional in the kitchen.  But seriously, it’s so convenience that you won’t go back to the traditional thermometer!


You might not think much of kitchen scales (unlike their cousins, a.k.a. bathroom scales), but it is a must-have in my kitchen.  There are quite a few recipes that calls for weighting ingredients (especially in baking) rather than using measuring cups for precision.  I measure all my ingredients when I make the French Macarons!  When I need to divide batters for multi-layer cakes, or bread dough for buns, having a kitchen scales will make your life much easier.  If you know someone who loves baking or getting serious about baking, this will make a wonderful gift!






If you want to make someone really happy, you can’t go wrong with gifting a KitchenAid mixer!  I use mine often and they truly last for a long time, definitely worth the investment, in my humble opinion.  Since it’ll probably be sitting/residing on your (or the lucky someone’s) kitchen counter (it’s way too heavy and bulky to store in the pantry or move around), I suggest that you pick a color that matches the rest of your/their kitchen appliances.  I tested out both the Bowl-Lift style (Professional Series) and the Tilt-Head style (Artisan Series), I would definitely recommend the Professional Series.  Not only it is more powerful, it's also more steady compared to the Artisan series.  Best of all, it has a bigger capacity on the Professional Series.

Classic Cornbread—Happy Thanksgiving!

During Summer, our family visited Orlando, Florida for vacation.  One of the restaurants that we dined at was called Whispering Canyon Cafe, which is located inside one of the Disney World Resort.  Don’t let the restaurant name fool you, there’s nothing quiet about that restaurant!  But the Kiddos and I had the most fun dining there.  Imagine having over 15 bottles of Ketchup on your table all at once upon request.  The whole restaurant, including the guests who dined there, would scream Ketchup for you and you’ll simply get a “special delivery” of ketchups!  My Kids still talk about that until now!

Also, how fun is it to run with 20 other kids around the restaurant tables with a Stick Pony in your hand right before dinner?  I’m sure your parents won’t think that’s a good idea anywhere else!  But it’s highly encouraged at the Whispering Canyon Cafe!  There are many more other fun activities and things happening when you dine there.  But you've got to be there to experience them yourselves!  So, if you happen to be in Florida for vacation or any other reason, be sure to reserve your table early.  They get booked up fast!

One of the most delicious item we've tried in that fun restaurant was the cornbread that comes with every meal.  It was slightly sweet, soft, moist and tender.  The corn flavor was wonderful and we always finish the whole mini loaf before the main course arrived.  Of course, I can’t help it but to recreate it at home.  My version used a combination of yellow corn meal, for the wonderful texture and corn flavor; along with some cake flour, for that soft and tender touch.  I also added some cream of corn, to keep it moist.  Plus, you also get the corn kernels throughout each piece because of the cream of corn in it.

The batter is super simple to put together and it’s then baked in the cast iron pan, which you can bring up to the table and serve, how easy and smart, right?  Plus, the cast iron pan really give you a nice crispy crust that you can’t get from other baking pans.  If you take care of the cast iron pan, it simply last you for a life time.  Not to mention, it’s super affordable as well.  This cornbread is simple, yet scrumptious and satisfying.  You will definitely go for a second, or third!  Make one for your Thanksgiving gathering and share it with your loved ones.  It’ll make the perfect side dish!

Happy Thanksgiving….


Tomorrow is Thanksgiving in the States.  As always, there are many, many things that I’m truly thankful for.   Instead of listing a long list of things or people that I’m thankful for, and risk putting you to sleep in the middle of this post, I have a better plan.  Below are some facts that I gathered around the web.  Something that got me thinking... thinking deep.

If you have a place called home, or a shelter, or a comfortable bed to sleep at night, you’re more fortunate than 100 million people around the world!

If you have clean water to drink and cook with when you turn on the faucet, you’re doing better than 780 million people around the globe!

If you don’t have to suffer hunger (it doesn't count if you’re on your special diet, by choice!), or have food on your table every night, you’re more fortunate than 7.1 billion people in the world!

If you’re one of those healthy and happy individual, not suffering from any illness or disabilities, you’re better off than 1 trillion people around the globe!

These are just a few numbers of things that got me thinking.  Of course, the list can go on and on as well, but I think you've got my point.  So, before I complain about life again (I know we all do, from time to time because we’re human), I would think about those who are less fortunate.  I'm sure you'll do the same. Also, if you have the ability, please help out those in need.  Something small to you might means the world to others.

While I count my blessings, I want to take this opportunity to wish you and your family good health, and have a wonderful time with your loved ones.  Happy Thanksgiving!

In my opinion, it’s not a party until we bring out the shrimp cocktails!  (check out my post here on How to Easily Peel and Devein Shrimps) These shrimp cocktails are better than the usual ones because they are Roasted Shrimp Cocktails!  The roasting really concentrate the wonderful shrimp flavors, plus, I added some fresh thyme for some earthy and lemony freshness.  You can go to the bottom of this post for the recipe.  See how convenience these cones and cups are (see picture below)?  I added the cocktail sauce on the bottom of the cones before “hanging” the shrimps onto them.  So, each person gets his/her own dipping sauce.   Double-dipping is highly recommended and encouraged here!  I did the same for the veggie sticks above but with a ranch dressing instead.

Happy Thanksgiving—Turkey for Dessert, anyone?

Turkey for dessert, anyone?  I don’t see why not if they are as charming and sweet as these Oreo Turkeys!  I can’t believe there are only a few days left before Thanksgiving.  If you haven’t take the real turkey out of your freezer (or get one from the market’s freezer), it’s about time to do so.  If your recipe has a long marinating/brining process, it could be already too late.  Opps…if that’s the case, don't panic! Go get yourself a pack of Oreo, some mini Reese's and confetti's...stay calm and make these sweet turkeys instead!  You won’t regret it. I promise!  And for the Thanksgiving entree, get a honey glazed ham instead.  I'm sure it'll be just as delicious.

When I was making these Oreo Turkeys with my kids the other day, we had a blast.  It’s always warm and sweet spending time with my kids in the kitchen.  Not to mention, we can sneak a few cookies and candies along the "production line"!  When the “glue” is actually sweet and tasty, that’s a big plus too.  When I’m in the kitchen with my kids, the list of “What I’m grateful for this year…” simply goes on and on.  I feel blessed to have my kids around me, that they are healthy and happy kids.

I probably don’t say or show it enough, how grateful I am for my lovely husband.  He works hard and studies hard so that the kids and I can play hard.  Smile with tongue out (Sorry, can’t help it, Honey.)  Seriously, I’m really thankful for everything that he does for the family, big or small.  He’s always so thoughtful, supportive, and caring.  What more can a wife ask for, right?  He’s really the perfect role model for the kids.   I’m truly grateful for that because sometimes I act like a kid myself. 

I’m grateful for my Parents and In-Laws, they are always loving, generous, caring, and supportive.  I’m grateful for my dear friends.  Although we don’t see each other often, some even live thousands of miles away, but I know I can count on them to be there whenever I need them.  I’m truly thankful for that.

I’m grateful that you’re still here reading my post and didn't click away.  Winking smile I’m truly thankful for that!  As a way to say thank you, let me show you how to make these Oreo Turkeys.  First, gather all your ingredients.  Some Oreo for the base and rear end, Mini Reese’s as the body, Whoppers for the head, Cookie Icing for the eyes and act as “glue”, Candy Corn as the beak and feathers, tiny black confetti for the eye balls, pink Nerds as the waddle and some melted chocolate as “glue”.

Here’s the pictorial on how to get this turkey done without putting it into the oven.

1) Have all your ingredients ready, unwrap from plastic bags/wrapping papers, etc.

2) Split the Oreo open, gently press 5 candy corns to the edges (as feather).  Add some cookie icing on the candy corns tips and cover back the other side of the Oreo cookie, set aside.

3) Trim one side of the mini Reese’s as shown (for its body).

4) Take another Oreo cookie and smear a little bit melted chocolate on top (for base).

5) Take the Oreo with melted chocolate to a vertical position and place the “feathered” Oreo on the side.  Smear some melted chocolate on the cut side and flat side of the Reese’s and place on top of the “feathered” Oreo.  Slightly dip the Whopper into the melted chocolate and place on top of the Reese’s (as the head).

6) Place a small amount of cookie icing on top of the Whopper on both left and right side (as the eyes).  Top with black confetti as eye balls.  Cut the tip off a candy corn, dip the cut side of the candy corn tip in melted chocolate and place below the eyes (as the beak).  Dip the pink Nerd in melted chocolate and place below the beak (as waddle).  Leave the turkeys alone until the chocolate and icing are firmed up before transferring or packing.
